Ingredients
Potatoes
- 2 pounds small red or yellow potatoes
Bacon and Aromatics
- 4 slices nitrate-free bacon
- 1 red onion, diced
Dressing
- 1 tbsp Dijon mustard
- 1/4 cup apple cider vinegar
- 2 tablespoons maple syrup
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
Optional Garnish
- Small handful of fresh parsley, chopped
Instructions
- Prepare Potatoes: Cut the potatoes into quarters and place them in a large pot. Add enough cold water to cover the potatoes by about an inch.
- Boil and Simmer: Bring the pot to a boil over high heat, then reduce to a simmer. Cook the potatoes until fork tender, approximately 5-8 minutes after boiling.
- Drain Potatoes: Drain the potatoes thoroughly in a colander and set aside to cool slightly.
- Cook Bacon: While the potatoes cool, heat a large skillet over medium heat (a cast iron skillet is ideal). Add bacon slices and sauté until crispy and fat is rendered. Remove bacon from the pan and place on a paper towel-lined plate to absorb excess grease. Turn off the heat.
- Sauté Onion and Make Dressing: In the same skillet with the bacon fat still warm, add the diced red onion and sauté briefly until translucent but not browned. Stir in Dijon mustard, apple cider vinegar, maple syrup, sea salt, and black pepper to create the warm dressing.
- Toss Salad: Add the drained warm potatoes back into the skillet with the dressing. Toss gently to coat the potatoes evenly with the dressing and warm flavors.
- Combine and Garnish: Crumble the cooked bacon over the potato salad and stir gently to combine. Sprinkle with freshly chopped parsley if desired. Serve warm or at room temperature.
Notes
- Use small red or yellow potatoes for the best texture and flavor.
- Ensure the bacon is crisp to add a nice contrast to the tender potatoes.
- This salad is best served warm or at room temperature, not cold.
- You can adjust the amount of maple syrup to balance the acidity of the vinegar to taste.
- For vegetarian variation, omit bacon and use smoked paprika in the dressing for flavor.
- Store leftovers in the refrigerator and gently rewarm before serving.
