Ingredients
Brussels Sprouts
- 1 lb Brussels sprouts
- 2 tbsp extra-virgin olive oil
- 1 tsp kosher salt
- Freshly ground black pepper, to season
- ¼ cup (¼ oz) flat-leaf parsley leaves, coarsely chopped
Honey Mustard Vinaigrette
- 1 tbsp whole grain mustard
- 1 tbsp (¾ oz) honey
- 2 tsp apple cider vinegar
- 1 tbsp extra-virgin olive oil
Instructions
- Preheat the air fryer. Insert the oven rack into position 3 down. Set the oven to Air Fry, Super Convection, at 400°F for 14 minutes and press Start to preheat, preparing for the Brussels sprouts' cooking.
- Prepare the Brussels sprouts. Trim the bases and cut larger sprouts in half, removing any tough outer leaves. Toss them with olive oil, kosher salt, and freshly ground black pepper to ensure an even coating.
- Arrange in the air fry basket. Place the Brussels sprouts in a single layer, evenly spaced apart, inside the air fry basket to allow optimal airflow and crispiness.
- Air fry the Brussels sprouts. Position a roasting pan on the rack to catch drips, then place the basket at position 1. Air fry for 14 minutes, then turn and stir the sprouts when the oven signals to promote even browning.
- Make the honey mustard vinaigrette. While the Brussels sprouts are cooking, whisk together whole grain mustard, honey, apple cider vinegar, and extra-virgin olive oil in a bowl until well combined.
- Check doneness and finish the sprouts. Confirm the Brussels sprouts are browned and tender by inserting a knife tip into the core; it should slide in easily. Cook a bit longer if necessary to perfect the texture.
- Toss and serve. Drizzle the prepared vinaigrette over the hot Brussels sprouts, sprinkle with chopped flat-leaf parsley, and serve immediately for the best flavor and texture.
