Ingredients
Pie Crust
- 2 rolls of refrigerated pie crusts
Filling
- Mini marshmallows (enough for approximately 12-16 hand pies, about 5-7 marshmallows per pie)
- Milk chocolate bars (cut into small pieces, about 1-2 teaspoons per pie)
- Graham cracker crumbs (a small pinch per pie)
Egg Wash
- 1 egg
- About 1 teaspoon of water or milk
Instructions
- Prepare Your Workspace and Ingredients: Unroll the two refrigerated pie crusts onto a lightly floured surface or parchment paper and let sit for 5-10 minutes at room temperature to soften. Separate mini marshmallows, chocolate pieces, and graham cracker crumbs into bowls. Whisk one egg with a teaspoon of water or milk to make egg wash.
- Cut Out Your Circles: Use a 3-4 inch round cookie cutter or rim of a glass to cut around 6-8 circles from each pie crust, totaling 12-16 circles. Re-roll scraps to cut additional circles as needed.
- Fill the Hand Pies: On one half of each circle, place 1-2 teaspoons of chocolate pieces, then top with 5-7 mini marshmallows. Sprinkle a small pinch of graham cracker crumbs over the marshmallows, being careful not to overfill.
- Seal the Hand Pies: Fold the unfilled half over the filling to create a half-moon shape. Press edges firmly together with fingers, then crimp edges with a fork to seal securely and decorate.
- Prepare for Air Frying: Make 2-3 small slits on top of each hand pie with a sharp knife to allow steam to escape. Brush the tops generously with the egg wash.
- Preheat Your Air Fryer: Preheat the air fryer to 350°F (175°C) for 3-5 minutes.
- Air Fry the Hand Pies: Place 2-4 hand pies in a single layer in the air fryer basket. Air fry for 6-9 minutes until the pastry is golden brown and puffed.
- Cool and Enjoy: Carefully remove the hand pies from the air fryer and allow them to cool slightly before serving for perfectly gooey, warm s’mores goodness.
Notes
- Do not overfill the hand pies as it makes sealing difficult and can cause filling to leak during cooking.
- You can substitute dark or semi-sweet chocolate bars for a different chocolate flavor.
- If your pie crust is too cold and stiff, let it sit longer at room temperature before cutting.
- Use a small slitted knife carefully to prevent filling from bursting out while cooking.
- Store leftover hand pies in an airtight container and reheat briefly in the air fryer for best texture.
- For easier cleanup, line your air fryer basket with parchment paper designed for air fryers.
