Arroz Verde, or Mexican green rice, is a vibrant side dish bursting with fresh flavors from roasted poblanos, jalapeño, garlic, and cilantro. Perfectly cooked rice soaked and then simmered in a flavorful green chile puree, resulting in a beautifully green, aromatic, and mildly spicy rice that complements a variety of Mexican meals.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 1 cup long grain white rice
  • 2 poblano chiles, stem and seeds removed (optional)
  • 1 jalapeño, stem and seeds removed (optional)
  • 2 garlic cloves
  • 1 small white onion, cut in half
  • 1/2 tsp salt
  • 1 1/4 cups chicken stock
  • 3 tbsp vegetable oil
  • 1/4 cup cilantro, chopped fine

Instructions

  1. Soak the Rice: In a medium-sized bowl, add the rice and cover it with boiling water. Allow the rice to soak for 15 minutes, then drain and rinse with cold water. Shake off the excess water and set aside to prepare for cooking.
  2. Roast the Vegetables: Dry roast the poblanos, jalapeño, and onion in a hot skillet until they start to blister and char slightly. This adds a smoky depth to the dish.
  3. Make the Green Chile Puree: Add the roasted poblanos, jalapeño, onion, garlic cloves, salt, and chicken stock to a blender. Puree until completely smooth, creating the vibrant green base for the rice.
  4. Toast the Rice: Heat the vegetable oil in a skillet or Dutch oven over medium heat. Add the soaked and drained rice and cook for about 2 minutes, stirring frequently to coat the grains evenly and allow them to turn a light golden color.
  5. Cook the Rice: Pour the green chile puree over the toasted rice. Bring the mixture to a boil, then cover and reduce the heat to a simmer. Cook for 20 minutes, or until the rice is tender and has absorbed the liquid.
  6. Finish and Rest: Remove the skillet or Dutch oven from the heat and stir in the chopped cilantro. Fluff the rice gently with a fork, cover again, and let it rest for 10 minutes to finish steaming and develop flavors.
  7. Season and Serve: Taste and adjust salt or seasoning as needed before serving. Enjoy your flavorful Arroz Verde as a perfect side to your Mexican meals.

Notes

  • Recipe adapted from MEXICO, by Margarita Carrillo Arronte.
  • Soaking the rice prior to cooking helps achieve a tender yet fluffy texture.
  • Removing seeds from the chiles reduces heat and bitterness but can be kept for extra spice if desired.
  • Use vegetable oil or any neutral oil suitable for high heat roasting and toasting.
  • Resting the rice after cooking allows for even moisture distribution and better texture.
  • Substitute chicken stock with vegetable stock to make the recipe vegetarian friendly.
