Ingredients
Fish and Garnish
- 1.5 lb cod fillet pieces (4-6 pieces)
- 1/4 cup chopped fresh parsley leaves
Lemon Sauce
- 5 tbsp fresh lemon juice
- 5 tbsp extra virgin olive oil
- 2 tbsp melted butter
- 5 garlic cloves, minced
Coating
- 1/3 cup all-purpose flour
- 1 tsp ground coriander
- 3/4 tsp sweet Spanish paprika
- 3/4 tsp ground cumin
- 3/4 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it is hot and ready for baking the cod.
- Prepare the lemon sauce: In a shallow bowl, mix the fresh lemon juice, extra virgin olive oil, and melted butter. Do not add the garlic yet; set this mixture aside for coating the fish later.
- Mix the coating: In another shallow bowl, combine the all-purpose flour, ground coriander, sweet Spanish paprika, ground cumin, salt, and black pepper. This mixture will give the fish a flavorful crust.
- Coat the fish: Pat the cod fillets dry with a paper towel. Dip each piece first into the lemon sauce mixture, then dredge them in the flour and spice mixture, shaking off any excess flour. Keep the remaining lemon sauce set aside for later use.
- Sear the fish: Heat 2 tablespoons of olive oil in a cast iron skillet or any oven-safe pan over medium-high heat. Once the oil shimmers but doesn't smoke, add the coated fish fillets. Sear each side for about 2 minutes to develop color and texture without fully cooking the fish. Then, remove the skillet from heat.
- Add garlic and bake: Add the minced garlic to the reserved lemon sauce and stir well. Drizzle this garlicky sauce evenly over the seared fish fillets in the skillet. Place the skillet in the preheated oven and bake for about 10 minutes, or until the fish flakes easily with a fork. Begin checking at around 8 minutes to avoid overcooking.
- Garnish and serve: Once baked, remove the cod from the oven and sprinkle the chopped fresh parsley over the top. Serve immediately to enjoy the bright, fresh flavors.
Notes
- Use a cast iron skillet or oven-safe pan for both searing and baking to simplify the cooking process.
- Start checking the fish for doneness at 8 minutes to prevent it from drying out.
- Patting the fish dry before coating helps achieve a better sear and crust.
- Fresh garlic added just before baking ensures the garlic flavor remains bright and aromatic without burning.
- Serve with a side of steamed vegetables or a light salad for a balanced meal.
