Ingredients
Sandwiches
- 12 large croissants, halved horizontally
- 2 pounds thinly sliced deli ham (about 3 slices per sandwich)
- 12 slices provolone cheese
- 12 slices baby Swiss cheese
- Freshly ground black pepper, to taste
Honey Dijon Mayo
- 1/2 cup mayonnaise
- 3 tablespoons dijon mustard
- 1 tablespoon honey
Topping
- 1 egg white
- 2 teaspoons poppy seeds
- Olive oil spray (for greasing pans)
- Snipped fresh chives, for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Lightly spray two 9x13 inch baking dishes (or one 9x13 and one 8x11) or a large nonstick rimmed baking sheet with olive oil spray to prevent sticking.
- Prepare Honey Dijon Mayo: In a bowl, combine the mayonnaise, dijon mustard, and honey. Stir well until fully blended to create a smooth honey dijon mayo.
- Prepare Croissants: Slice each croissant in half horizontally. Lightly spread the honey dijon mayo onto each cut side of the croissants and season with freshly ground black pepper.
- Assemble Sandwiches: On the bottom half of each croissant, layer one slice of provolone cheese, then 2 to 3 slices of thinly sliced deli ham, followed by one slice of baby Swiss cheese. Place the top half of the croissant onto the filling to complete the sandwich and place the sandwiches in the prepared baking dishes.
- Prepare Topping: In a small bowl or cup, whisk the egg white with a splash of water to thin it slightly. Brush this mixture over the tops of each sandwich to help them develop a glossy, crisp crust when baked. Sprinkle the tops with poppy seeds for added texture and flavor.
- Bake Sandwiches: Place the pans on the middle rack of the oven and bake for 10 to 12 minutes or until the ham is heated through, the cheese has melted, and the croissants are golden brown with crispy edges.
- Serve: Remove from the oven and optionally sprinkle with snipped fresh chives before serving. Enjoy warm for the best flavor and texture.
Notes
- You can halve the recipe to make fewer sandwiches if needed.
- For extra crispiness, broil the sandwiches for 1-2 minutes at the end but watch closely to avoid burning.
- Use fresh croissants for best results; day-old croissants can be toasted first to regain flakiness.
- Feel free to switch up the cheese with your favorite types if desired.
