Ingredients
Bread & Spreads
- 12 large croissants, halved horizontally
- 1/2 cup mayonnaise
- 3 tablespoons dijon mustard
- 1 tablespoon honey
- Freshly ground black pepper, to taste
Fillings
- 2 pounds thinly sliced deli ham (about 3 slices per sandwich)
- 12 slices provolone cheese
- 12 slices baby Swiss cheese
Finishing Touches
- Olive oil spray (for greasing pans)
- 1 egg white
- 2 teaspoons poppy seeds
- Snipped fresh chives, for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly spray 2 baking dishes—either two 9x13 inch pans or one 9x13 and one 8x11 pan. Alternatively, you can use a large nonstick rimmed baking sheet and lightly spray it with olive oil spray.
- Prepare the Honey Dijon Mayo: In a bowl, combine 1/2 cup mayonnaise, 3 tablespoons dijon mustard, and 1 tablespoon honey. Mix well until fully combined.
- Assemble the Croissants: Slice each croissant in half horizontally. Lightly spread the cut sides of each half with the prepared honey dijon mayo. Season with freshly ground black pepper to taste.
- Add Fillings: On the bottom half of each croissant, layer one slice of provolone cheese, 2 to 3 slices of thinly sliced deli ham, then a slice of baby Swiss cheese. Replace the top half of the croissant over the filling and set each assembled sandwich into the prepared baking dishes. Repeat this process for all sandwiches.
- Brush with Egg White & Add Poppy Seeds: In a small bowl or cup, whisk together the egg white with a splash of water until combined. Brush the tops of each sandwich with this egg white mixture to help create a glossy and crispy top. Sprinkle the tops evenly with 2 teaspoons of poppy seeds.
- Bake: Place the baking dishes on the middle rack of the oven and bake for 10 to 12 minutes, or until the ham is heated through, and the cheese has melted completely. The croissants should be golden brown with crispy edges.
- Garnish and Serve: Remove from the oven and optionally sprinkle with snipped fresh chives before serving. Enjoy warm.
