Ingredients
Base Layer
- 1 (16-ounce) loaf brioche bread, cubed
- 1 (8-ounce) package cream cheese, cubed
- ½ pound strawberries, diced
Top Layer
- Remaining ½ pound strawberries, diced (for topping)
- 1 tablespoon confectioners’ sugar (for topping)
Custard Mixture
- 12 large eggs, beaten
- 2 cups whole milk
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon kosher salt
Instructions
- Prepare Baking Dish and Layer Bread: Lightly coat a 9×13 inch baking dish with nonstick spray. Spread half of the cubed brioche bread evenly in the dish. Add the cubed cream cheese, then top with half of the diced strawberries in an even layer. Cover with the remaining bread cubes to enclose the filling completely.
- Mix Custard and Soak Bread: In a large bowl or glass measuring cup, thoroughly whisk together the beaten eggs, whole milk, maple syrup, vanilla extract, and kosher salt. Pour this custard mixture evenly over the layered bread and cream cheese. Cover the dish tightly and refrigerate for at least 2 hours or overnight to allow the bread to soak up the custard.
- Bring to Room Temperature: Remove the baking dish from the refrigerator about 30 minutes before baking to let it come to room temperature, ensuring more even cooking.
- Bake the French Toast: Preheat your oven to 350°F (175°C). Place the baking dish covered in the oven and bake for 30 minutes. Then remove the cover and continue baking for another 25 to 30 minutes until the top is golden brown and the center is set and firm.
- Garnish and Serve: Once baked, serve this luscious French toast immediately. Sprinkle the top with the remaining diced strawberries and a dusting of confectioners’ sugar for a fresh and sweet finish.
Notes
- For richer flavor, use brioche bread as it soaks up the custard beautifully.
- Soaking time is crucial for a custardy interior; refrigerate the mixture overnight if possible.
- Covering while baking prevents the custard from drying out, uncover towards the end for a golden crust.
- Leftovers can be refrigerated and gently reheated in the oven or microwave.
- Maple syrup can be substituted with honey or agave syrup for variation.
