Baked Vanilla Cardamom Nectarines is a simple and delightful dessert featuring nectarine halves baked with a fragrant blend of brown sugar, butter, and warm spices like cardamom, cinnamon, and nutmeg. Enhanced with vanilla-scented orange juice, these nectarines are served warm topped with creamy vanilla ice cream, crunchy honey almond granola, and fresh rosemary for an elegant finish. This recipe yields 4 servings and takes just 40 minutes from start to finish.

  • Total Time: 40 mins
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 4 nectarines, slightly firm but not over-ripe
  • 2 tablespoons light brown sugar, granulated sugar or honey
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup orange juice
  • 1 teaspoon vanilla bean paste, or pure vanilla extract
  • 2 tablespoons unsalted butter, cut into 8 pieces

For Serving (Optional)

  • 4 scoops vanilla ice cream
  • 1 cup honey almond granola
  • 1 tablespoon chopped fresh rosemary

Instructions

  1. Preheat the oven: Set your oven to 350°F (180°C) to prepare for baking the nectarines.
  2. Prepare nectarines: Cut each nectarine in half following the stem like an avocado, remove pits and any remaining stem, then set aside.
  3. Make spiced sugar mixture: In a small bowl, combine brown sugar, ground cardamom, cinnamon, and nutmeg, mixing well to blend the spices evenly.
  4. Prepare vanilla orange juice: Stir vanilla bean paste or pure vanilla extract into the orange juice until fully incorporated.
  5. Arrange nectarines in pan: Pour the vanilla orange juice mixture into a baking dish or nonstick pan. Place the nectarines cut-side up in the dish. Sprinkle about 1 teaspoon of the spiced sugar mix onto each nectarine half and dot each center with pieces of butter.
  6. Bake nectarines: Place the baking dish on the middle rack of the preheated oven and bake for 30 minutes, rotating the pan halfway through to ensure even baking.
  7. Brush syrup and cool: After baking, brush the buttery brown sugar syrup that has collected in the centers over the nectarines. Allow them to cool slightly before serving.
  8. Serve dessert: Divide 2 baked nectarines per bowl. Top each serving with a scoop of vanilla ice cream, 1/4 cup honey almond granola, and a sprinkle of fresh chopped rosemary. Optionally drizzle some of the baking syrup over the top for extra flavor.
  9. Optional syrup tip: If the syrup is stuck to the bottom of the pan, warm it slightly with a splash of orange juice and gently scrape it loose with a spatula before drizzling.

Notes

  • Nutrition info provided is for the baked nectarines only and does not include the optional ice cream or granola.
  • You can substitute light brown sugar with granulated sugar or honey as preferred.
  • Use vanilla bean paste or pure vanilla extract for the best vanilla flavor.
  • If the syrup thickens too much in the pan, warming with orange juice helps loosen it for easy drizzling.
  • This dessert is best served warm immediately after baking for the best flavor and texture.
  • Fresh rosemary adds a lovely herbal note but can be omitted if unavailable.
