Ingredients
Dry Ingredients
- 4 cups self-rising flour, preferably White Lily, plus more for dusting
Wet Ingredients
- 1 1/2 cups buttermilk
- 8 tablespoons butter, cut in small cubes and at room temperature
- 1/2 cup cream cheese, room temperature
- 2 tablespoons melted butter (for brushing)
Instructions
- Preheat Oven: Preheat the oven to 500°F (260°C) with the rack in the middle position.
- Combine Flour and Fats: Place 4 cups of self-rising flour in a large wide bowl. Sprinkle the butter cubes and cream cheese on top of the flour. Use your fingers to cut the butter and cream cheese into the flour until the mixture resembles chunky cottage cheese with some loose flour.
- Add Buttermilk: Create a well in the center of the flour mixture and pour the buttermilk into it. Use your hands or a rubber spatula to gently mix the buttermilk into the flour. Mix just until combined; the dough will be wet and messy. Avoid overmixing to keep biscuits tender.
- Prepare Work Surface: Flour a work surface generously, preferably using parchment paper. Dump the dough onto the floured surface. Flour a rolling pin and sprinkle flour over the dough.
- Roll the Dough: Roll the dough out to a 1/2-inch thickness. Do not knead the dough to maintain tenderness.
- Cut Biscuits: Flour a 2-inch round biscuit cutter. Press it straight down into the dough and pull straight up without twisting. Cut as many biscuits as possible. Roll the dough scraps once more to cut additional biscuits.
- Arrange Biscuits: Transfer biscuits to a baking pan with sides or a cast iron skillet so that the sides of the biscuits touch. Optionally line the pan with parchment paper.
- Brush with Butter: Brush the tops of the biscuits with melted butter.
- Bake Biscuits: Immediately reduce the oven temperature to 450°F (232°C) and bake for 16 to 18 minutes. Rotate the pan once during baking for even browning.
