Cattle Drive Casserole is a hearty and flavorful Tex-Mex inspired layered dish combining seasoned ground beef, a soft biscuit base, and creamy cheese and sour cream layers. Perfect for a comforting family dinner, this casserole brings together the bold flavors of the Old West with the cheesy, spicy notes of traditional Southwestern cuisine.

  • Total Time: 55 minutes
  • Yield: 8 servings

Ingredients

Meat and Vegetables

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped

Seasonings and Mixes

  • 1 ounce Taco Seasoning Mix
  • 1 teaspoon Garlic Powder

Biscuit Base

  • 2 ½ cups Biscuit Mix (such as Bisquick)
  • 1 cup Water
  • Cooking Spray (like Pam), for greasing dish

Sour Cream Layer

  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • ¾ cup Cheddar Cheese, Fiesta Blend, shredded (for mixing)

Toppings

  • ½ cup Salsa, mild
  • ¾ cup Cheddar Cheese, Fiesta Blend, shredded (for topping)

Instructions

  1. Preheat the Oven: Set your oven to 350℉ to prepare for baking the biscuit base and the casserole.
  2. Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a spoon. Cook until no longer pink, stirring occasionally. Drain off excess fat to keep the casserole lean.
  3. Prepare the Biscuit Dough: While the beef cooks, combine biscuit mix and water in a mixing bowl. Mix thoroughly, preferably by hand, until dough forms evenly. Spray a 9 x 13-inch casserole dish with cooking spray and press the dough evenly across the bottom to the edges.
  4. Bake Biscuit Base: Place the biscuit dough in the preheated oven and bake for 5-8 minutes or until it is set and lightly golden. Remove and keep the oven on for later baking.
  5. Cook the Vegetables: To the cooked beef in the skillet, add chopped onion and red bell pepper. Cook together for about 4 minutes until vegetables soften. Add taco seasoning mix and stir well to combine. Remove skillet from heat.
  6. Assemble Ground Beef Layer: Spread the cooked beef and vegetable mixture evenly over the pre-baked biscuit base in the casserole dish.
  7. Prepare Sour Cream Layer: In a medium bowl, mix sour cream, mayonnaise, drained green chiles, ¾ cup shredded cheddar cheese, and garlic powder until smooth and uniform.
  8. Spread Sour Cream Mixture: Carefully spread the sour cream mixture evenly over the ground beef layer in the casserole dish.
  9. Add Salsa and Cheese: Dollop spoonfuls of mild salsa across the sour cream layer without spreading it out. Sprinkle the remaining ¾ cup shredded cheddar cheese evenly on top.
  10. Bake the Casserole: Return the assembled casserole to the oven, uncovered, and bake for 30 minutes or until the dish is hot and bubbly.

Notes

  • Drain excess fat from the ground beef to reduce grease in the casserole.
  • Use cooking spray generously to prevent biscuit base from sticking to the casserole dish.
  • The biscuit base only needs a short bake initially, as it will continue cooking when the full casserole is baked.
  • Salsa can be adjusted in quantity or swapped for a spicier version if more heat is desired.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
