Assembly & Garnishes
- 6 frozen parathas (such as Dawn or Kawan flaky parathas)
- Tamarind chutney (store-bought)
- ¼ onion, thinly sliced
- 2 tbsp fresh cilantro, chopped
Instructions
- Marinate the Chicken Tikka: Cut the chicken tenders into 1-2 inch cubes. In a bowl, mix the chicken with plain yogurt, lemon juice, olive oil, ginger & garlic paste, salt, cumin powder, coriander powder, chili powder, chaat masala, garam masala, turmeric powder, and optional food color. Combine thoroughly to coat the chicken evenly. Cover and allow to rest for at least 1 hour to absorb the flavors.
- Preheat the Broiler: Set your oven to the broiler setting and position the rack at the topmost shelf to get the chicken close to the heat source.
- Thread and Broil the Chicken: Thread the marinated chicken cubes onto 4-5 skewers. If using wooden skewers, soak them in water beforehand to prevent burning. Place the skewers over a baking dish so the chicken is suspended above the pan, allowing even cooking and catching drips.
- Broil the Chicken on One Side: Place the skewers under the broiler approximately 6 inches from the heat source. Broil for 7-8 minutes until the chicken starts charring nicely.
- Flip and Broil the Other Side: Turn the skewers to the other side and broil for an additional 7 minutes until the chicken is well-charred and cooked through.
- Rest and Chop the Chicken: Remove the skewers from the oven and let the chicken rest for 5 minutes. Then carefully remove chicken pieces from the skewers and roughly chop into bite-sized pieces. Toss the chicken with its own juices to keep it moist and flavorful.
- Prepare the Yogurt Mayo Sauce: In a clean bowl, whisk together plain yogurt, mayonnaise, garlic powder, cayenne or red chili powder, and paprika until smooth and well combined.
- Make the Green Chutney: Add fresh cilantro, fresh mint leaves, cumin seeds, green chilis, garlic cloves, salt, plain yogurt, and water to a blender. Blend until you get a smooth chutney. Adjust water quantity to achieve your preferred consistency.
- Cook the Parathas: Heat a skillet on the stovetop and cook each frozen paratha according to the package instructions until they become light golden and flaky.
- Assemble the Rolls: Lay one warm paratha on a flat surface. Spread a generous layer of the yogurt mayo sauce down the middle. Arrange the chopped chicken tikka along the sauce in a line. Sprinkle thinly sliced onions over the chicken. Drizzle 1-2 teaspoons each of the green chutney and tamarind chutney over the top. Garnish with chopped fresh cilantro. Carefully roll the paratha tightly to form a roll.
- Crisp the Rolls: Preheat an air fryer to 325°F (163°C). Place the paratha rolls inside and air fry for 3-4 minutes until the outer layer becomes crispy again.
- Serve: Remove from air fryer and serve immediately while hot and crispy. Enjoy your flavorful Chicken Tikka Paratha Rolls!
Notes
- Marinating the chicken for longer than 1 hour (up to overnight) will enhance the flavors.
- Soaking wooden skewers prevents burning during broiling.
- You can adjust the chili powder in the marinade to control the heat level.
- Fresh homemade chutneys can be refrigerated for up to 3 days.
- Ensure the parathas are warm and flaky for easy rolling and better texture.
- The air frying step crisps up the roll without making it greasy like pan frying.
- If you do not have an air fryer, a light pan toasting can be done as an alternative.
