Ingredients
Chicken
- 3 cups grilled and diced chicken (approximately 4 tenderloins or 2 small chicken breasts)
Vegetables & Toppings
- ⅓ cup diced tomatoes
- ½ avocado, diced (about ⅓ cup)
- ⅔ cup shredded lettuce
- ¼ cup fiesta strips or crushed tortilla chips
Sauces & Cheese
- 4 tablespoons flamethrower sauce (or chipotle ranch)
- ⅓ cup shredded cheddar cheese
Others
- 2 burrito tortillas
- Oil for pan cooking
Instructions
- Prepare the Chicken: Grill the chicken as desired until fully cooked. Dice into bite-sized pieces and set aside. Alternatively, use leftover or rotisserie chicken to save time.
- Make the Sauce and Prep Ingredients: Prepare the flamethrower sauce or chipotle ranch sauce if making from scratch. Dice tomatoes and avocado, and shred lettuce while the chicken cooks.
- Mix the Filling: In a large bowl, combine the grilled chicken, diced tomatoes, avocado, shredded lettuce, fiesta strips, cheese, and flamethrower sauce. Mix thoroughly so every ingredient is coated evenly with the sauce.
- Assemble the Burritos: Heat a pan over medium heat with a small amount of oil. Place half of the filling mixture onto each tortilla. Fold opposite sides in and roll the tortilla tightly around the filling, keeping the seam side down to secure the burrito.
- Seal and Cook Burritos: Add a little shredded cheese along the inside seam of each tortilla before placing them seam side down in the hot pan. Cook for 1-2 minutes on each side until the tortillas are golden brown and slightly crispy. Press gently on top of the burrito to flatten it slightly and hold its shape.
- Serve: Remove from the pan once golden and crispy. Let cool for a minute, then slice and serve warm.
Notes
- You can substitute grilled chicken with rotisserie or leftover cooked chicken for convenience.
- The flamethrower sauce or chipotle ranch adds a spicy, smoky kick but adjust the amount to suit your heat preference.
- To make the burrito easier to eat, pressing it slightly while cooking helps keep it compact.
- Use fresh tortillas for best texture; warming them slightly before assembly helps prevent cracking.
- Feel free to add extra veggies like bell peppers or onions for variation.
