Ingredients
Butter Cookies
- 1 cup unsalted butter, room temperature (226g)
- 3/4 cup granulated sugar (150g)
- 1 Tbsp vanilla extract or vanilla bean paste (15g)
- 2 tsp almond extract (10g)
- 1 large egg, room temperature (56g)
- 2 1/4 cups all-purpose flour – fluffed, spooned & leveled (290g)
- 1 tsp fine salt (6g)
Decorations – Optional
- 2 Tbsp nonpareil sprinkles
- 1 cup milk, semi-sweet, or dark chocolate chips, melted (175g)
- 2 tsp vegetable or canola oil (10g)
Instructions
- Prepare baking sheets and chilling space: Line two large baking sheets with parchment paper or silicone mats. Clear space in your refrigerator or freezer since the piped cookie dough must chill for 30 minutes in the fridge or 15 minutes in the freezer before baking.
- Cream butter and sugar: In a large bowl, beat 1 cup room temperature butter and 3/4 cup granulated sugar on medium-high speed with a handheld or stand mixer until light and fluffy, about 2 minutes.
- Add extracts and egg: Mix in 1 large egg, 1 Tbsp vanilla extract or vanilla bean paste, and 2 tsp almond extract on medium-high speed until fully combined. Scrape the bowl to incorporate.
- Incorporate dry ingredients: Add 2 1/4 cups all-purpose flour and 1 tsp fine salt. Mix on low speed until flour is mostly combined, then increase to medium-high speed and beat until dough is smooth, thick, but still pipeable.
- Test dough consistency for piping: Fit a large piping bag with a large closed star tip. Scoop about 1/2 cup dough into the bag and pipe a 3-inch swirl. If too thick, return dough to bowl and mix in 1 tsp milk, repeating until pipeable.
- Pipe cookies: Pipe 3-inch swirls or squiggles onto prepared baking sheets, spacing about 2 inches apart. Take breaks as needed.
- Chill dough: Place baking sheets in the refrigerator for 30 minutes or freezer for 15 minutes. Meanwhile, preheat the oven to 350°F (175°C).
- Bake cookies: Bake one tray at a time on the middle oven rack for 14-17 minutes, or until the cookie edges just start to brown. Cookies will spread but hold their piped shapes.
- Cool cookies: Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
- Melt chocolate: Melt 1 cup of milk or dark chocolate chips in a double boiler or microwave in 20-second increments, stirring regularly. Stir in 2 tsp vegetable, canola, or coconut oil to thin the chocolate for easier dipping.
- Dip cookies: Cover a baking sheet with parchment. Dip cooled cookies halfway into the melted chocolate. Let excess chocolate drip off, scrape the bottom edge against the bowl. Optionally, sprinkle with nonpareil or holiday sprinkles.
- Set chocolate: Place dipped cookies on the parchment-lined sheet and allow chocolate to firm up at room temperature for 30 minutes or refrigerate for 15 minutes.
Notes
- The dough cannot be chilled before piping as it becomes too stiff to pipe.
- Proper measuring of flour (fluffed, spooned, leveled or weighed) is key for correct dough consistency.
- If dough is too thick to pipe, add milk one teaspoon at a time until pipeable.
- Chilling the piped dough helps the cookies keep their shape during baking.
- Adding oil to melted chocolate thins it, making dipping easier and giving a smoother finish.
- Allow cookies to cool completely before chocolate dipping to prevent melting and smudging.
