Ingredients
For the Salad:
- 2 15-oz cans chickpeas, drained and rinsed
- 1 pint cherry tomatoes, halved
- 1 medium shallot, finely chopped
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- 2 tablespoons pistachios, toasted and chopped (optional)
For the Dressing:
- 1 tablespoon lemon zest (from 1 medium lemon)
- 3 tablespoons lemon juice (from 1 medium lemon)
- 2 tablespoons red wine vinegar
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon ground cumin
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
Instructions
- Combine Salad Ingredients: In a large bowl, mix together the drained chickpeas, halved cherry tomatoes, finely chopped shallot, chopped parsley, basil, and toasted pistachios if using. Toss gently to evenly distribute all components.
- Prepare the Dressing: In a small bowl, whisk lemon zest, lemon juice, red wine vinegar, extra-virgin olive oil, ground cumin, kosher salt, and black pepper until the dressing is well combined and emulsified.
- Toss Salad with Dressing: Pour the freshly made dressing over the chickpea salad mixture and toss thoroughly to coat all ingredients evenly with the dressing for maximum flavor.
- Chill to Meld Flavors: Refrigerate the salad for at least 30 minutes, or ideally overnight, allowing the flavors to meld and deepen. Before serving, taste and adjust seasoning as needed.
Notes
- Rinse chickpeas well to remove excess starch, which helps the dressing adhere better to the salad.
- The flavor profile strengthens and deepens when the salad rests overnight, perfect for prepping ahead.
- For crunchier texture, add toasted pistachios just before serving rather than mixing them in immediately.
- Store salad in an airtight container refrigerated for up to 4 days.
- For meal prep, layer salad ingredients in 16-oz wide-mouth mason jars starting with dressing, followed by chickpeas, shallots, tomatoes, herbs, and pistachios at the top to keep them crisp. Shake well before eating.
