Ingredients
Marinade & Steak
- 1 (7oz) can chipotle peppers in adobo sauce
- 1/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1/4 cup honey
- 8 cloves garlic
- 1 bunch cilantro
- Juice of 1/2 lime
- 2 tsp chipotle powder
- 1 tsp chili powder
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 2 tsp salt
- 1/2 tsp black pepper
- 1.5 to 2 lbs steak (such as flank or skirt steak)
Instructions
- Prepare the marinade: In a blender or food processor, combine the chipotle peppers in adobo sauce, red wine vinegar, honey, extra virgin olive oil, lime juice, cilantro, garlic cloves, cumin, chili powder, chipotle powder, oregano, garlic powder, onion powder, salt, and black pepper. Blend the ingredients until you achieve a smooth marinade.
- Marinate the steak: Place the steak in a large bowl and pour the prepared marinade over it. Reserve 1/4 cup of the marinade and set aside for later. Allow the steak to marinate for at least 15 minutes at room temperature or up to several hours in the refrigerator for more flavor.
- Remove excess marinade: Take the steak out of the marinade, shaking off any excess liquid to prevent splattering when cooking.
- Sear the steak: Heat a large skillet over high heat and add a small amount of oil. Sear the steak for 3-4 minutes on each side until a nice crust forms and the desired doneness is reached. Remove the steak from the skillet and let it rest briefly.
- Slice and cube the steak: Slice the rested steak thinly against the grain and then cut slices into bite-sized cubes.
- Sauté the cubed steak: Return the same skillet to high heat, add 1 tablespoon of the reserved marinade, and then add the steak cubes. Sauté for 20-30 seconds to coat the meat and warm it through without overcooking.
- Serve: Serve the steak immediately with your favorite sides such as rice, beans, roasted vegetables, or use it as a filling for tacos or burritos along with your preferred toppings.
Notes
- Allowing the steak to marinate longer will deepen the flavor.
- Use flank or skirt steak for best results as they hold the marinade well and are flavorful.
- Resting the steak after searing ensures juicier meat when sliced.
- Be cautious when searing to avoid overcooking; high heat and quick cooking preserve tenderness.
- Reserve some marinade before contacting raw meat to use safely later for sautéing.
- Serve with classic Mexican sides like cilantro-lime rice and black beans for an authentic experience.
