Crab Shrimp Queso is the ultimate party snack combining creamy, cheesy seafood flavors with a crispy, golden tortilla exterior. This Tex-Mex appetizer features a delightful blend of shrimp, crab meat, Monterey Jack cheese, and a touch of queso dip, pan-fried to perfection for a crunchy, gooey treat perfect for gathering and entertaining.

  • Total Time: 25 minutes
  • Yield: 8 tubes

Ingredients

Seafood Mixture

  • 1/2 lb cooked shrimp, finely chopped
  • 1/2 lb cooked crab meat, shredded

Cheese and Seasonings

  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup queso dip (mild or spicy)
  • 1 tbsp fresh cilantro, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika

Assembly and Cooking

  • 8 small flour tortillas
  • 2 tbsp butter or oil (for frying)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the finely chopped cooked shrimp, shredded crab meat, shredded Monterey Jack cheese, softened cream cheese, queso dip, chopped fresh cilantro, garlic powder, and smoked paprika. Mix well until you achieve a creamy, cohesive seafood and cheese filling that’s bursting with flavor.
  2. Assemble the quesos: Take each small flour tortilla and spoon about 2 to 3 tablespoons of the seafood filling onto it. Roll the tortilla tightly around the filling, ensuring the edges are sealed securely, and use a toothpick to hold the rolled tortilla in place.
  3. Pan-fry the quesos: Heat the butter or oil in a skillet over medium heat. Once hot, carefully place the rolled tortillas seam side down in the skillet. Fry until the tortillas are golden brown and crunchy on all sides, turning as needed to achieve even coloring and crisp texture.
  4. Serve: Remove the quesos from the skillet and take out the toothpicks. Arrange them on a serving plate and drizzle warm queso dip over the top. Garnish with extra fresh cilantro for a bright, fresh finish. Serve immediately while the cheese inside is gooey and irresistible.

Notes

  • You can prepare these quesos ahead of time and refrigerate them. Fry them just before serving to maintain crispiness.
  • Adjust the spice level of the queso dip according to your preference to make it mild or spicy.
  • Consider serving with additional toppings like sliced jalapeños or creamy avocado for added flavor and texture.
