This creamy chicken and gnocchi recipe is a delightful one-pan meal featuring tender chicken pieces, fluffy gnocchi, fresh baby spinach, and tangy sundried tomatoes all simmered together in a luscious Parmesan cream sauce. Perfect for a comforting weeknight dinner, this dish combines Italian-inspired flavors with easy preparation in just 25 minutes.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Main Ingredients

  • 2 tablespoons olive oil or sundried tomato oil
  • 1 pound chicken breast, cut into ¾ – 1 inch pieces
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 16 ounces gnocchi
  • 1 teaspoon smoked paprika
  • ⅓ cup sundried tomatoes, chopped
  • ½ cup Parmesan cheese, grated
  • 2 cups baby spinach leaves

Instructions

  1. Heat the Oil and Cook Chicken: Heat olive oil in a large 12-inch stainless steel skillet over medium-high heat until shimmering. Add the chicken pieces and season with Italian seasoning, salt, and black pepper. Cook the chicken for 5–7 minutes until golden brown and cooked through on the inside. Remove the chicken from the skillet and set it aside.
  2. Sauté Garlic and Add Liquids: Reduce heat to medium and add butter to the skillet. Once melted, add the minced garlic and sauté for about 1 minute until fragrant but not browned. Then pour in the chicken stock and heavy cream, stirring well to combine.
  3. Add Gnocchi and Seasonings: Add the gnocchi to the skillet along with smoked paprika and chopped sundried tomatoes. Stir to evenly distribute all the ingredients. Bring the mixture to a simmer and cook for about 5-7 minutes, stirring occasionally, until the gnocchi are tender and have absorbed some of the sauce.
  4. Combine Chicken and Spinach: Return the cooked chicken back into the skillet along with the baby spinach leaves. Stir everything together until the spinach wilts and the chicken is heated through, another 2-3 minutes.
  5. Finish with Parmesan: Sprinkle grated Parmesan cheese over the skillet and gently stir to incorporate the cheese into the creamy sauce, creating a rich and flavorful coating for the gnocchi and chicken.
  6. Serve Hot: Taste and adjust seasoning if needed, then serve immediately while warm, enjoying this comforting, creamy chicken and gnocchi dish.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a lower-fat cream option.
  • You can use fresh or frozen gnocchi; adjust cooking time accordingly if frozen.
  • If you prefer spicier food, add a pinch of red pepper flakes during the garlic sauté step.
  • This dish pairs well with a simple green salad or steamed vegetables for a complete meal.
  • Make sure to stir frequently once the gnocchi is added to prevent sticking to the pan.
