Ingredients
Chicken
- 4 thin-cut chicken breasts
- Salt & Pepper, to taste
- ¼ cup all-purpose flour, divided
Cooking Fats
- 2 Tablespoons olive oil
- 2 Tablespoons butter, divided
Sauce
- 8 garlic cloves, smashed
- ¾ cup chicken broth
- ¾ cup heavy cream
- ½ teaspoon Italian seasoning
Instructions
- Season and Dredge the Chicken: Season the chicken breasts with salt and pepper. Place 3 tablespoons of flour on a plate or shallow bowl. Dredge each chicken breast in the flour until lightly coated.
- Brown the Chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the chicken and cook for 4-5 minutes per side until golden brown. Remove the chicken from the pan and cover with foil to keep warm.
- Prepare Garlic Butter: Reduce heat to medium-low and add the remaining 1 tablespoon of butter to the pan. Let it melt, then add the smashed garlic cloves. Cook gently for 4-5 minutes to lightly brown the garlic and infuse the butter, being careful not to burn the garlic.
- Create the Sauce Base: Sprinkle the remaining 1 tablespoon of flour into the pan and stir continuously until the flour is fully incorporated with no white spots remaining. Increase the heat to medium.
- Add Liquids and Seasoning: Slowly pour in the chicken broth and heavy cream while whisking to combine smoothly. Stir in the Italian seasoning. Bring the sauce to a simmer and cook for 5-7 minutes until it thickens slightly. Taste and adjust seasoning with salt and pepper as needed.
- Finish Cooking the Chicken: Return the chicken breasts along with any juices to the skillet. Cook together for 1-2 minutes until the chicken is fully cooked through and coated in the creamy garlic sauce.
- Serve: Serve the chicken topped with chopped parsley if desired, over pasta, rice, or mashed potatoes for a delicious and comforting meal.
Notes
- Use thin-cut chicken breasts to ensure even and quick cooking.
- Do not burn the garlic; keep the heat medium-low when browning it to infuse the flavor gently.
- The sauce can be adjusted in thickness by simmering longer to reduce or adding a splash more broth or cream if too thick.
- Optionally garnish with fresh parsley or grated Parmesan cheese for extra flavor.
- This dish pairs well with sides like steamed vegetables, mashed potatoes, or your favorite pasta.
