Ingredients
Cabbage
- 1 medium head Cabbage (about 2 lbs); red cabbage can be used as a substitute
Cooking Fat
- 2 tablespoons Unsalted Butter
- 1 tablespoon Olive Oil
Aromatics
- 1 small Yellow Onion, finely chopped
- 4 cloves Garlic, minced
Creamy Sauce
- ½ cup Heavy Cream
- ½ cup Parmesan Cheese, freshly grated
Seasoning
- 1 teaspoon Cajun Seasoning (or Creole seasoning)
- Salt and Pepper, to taste
Garnish
- 1 tablespoon Fresh Parsley, chopped
Instructions
- Cabbage Preparation: In a large skillet over medium-high heat, melt 2 tablespoons of unsalted butter together with 1 tablespoon olive oil. Add the cabbage wedges cut side down and sear for 3 to 4 minutes until they develop a golden brown crust. Flip the wedges and sear the other side for an additional 3 to 4 minutes. Once seared, remove the cabbage from the skillet and set aside.
- Cooking Aromatics: Reduce the heat to medium. In the same skillet, add the finely chopped yellow onion and sauté for about 5 minutes until they soften and turn a golden brown color, releasing their natural sweetness.
- Adding Flavors: Add the minced garlic cloves and 1 teaspoon of Cajun seasoning to the onions. Stir and cook for 1 minute, making sure the garlic becomes fragrant but does not burn.
- Make the Sauce: Pour ½ cup of heavy cream into the skillet while scraping the bottom to loosen any brown bits. Allow the cream to simmer gently for 2 to 3 minutes, stirring occasionally until the sauce thickens slightly.
- Final Touch: Stir in ½ cup of freshly grated Parmesan cheese and 1 tablespoon of chopped fresh parsley. Return the seared cabbage wedges to the skillet and spoon the creamy sauce over them to coat evenly. Season with salt and pepper to taste, then serve warm.
Notes
- You can substitute red cabbage for a colorful variation.
- Use freshly grated Parmesan cheese for a smoother sauce texture; avoid pre-shredded varieties that contain anti-caking agents.
- If Cajun seasoning is too spicy, Creole seasoning is a milder alternative.
- For a dairy-free version, substitute butter with olive oil and use coconut cream instead of heavy cream, but note that this will alter the flavor profile.
- This dish pairs beautifully with grilled meats or roasted chicken for a complete meal.
