Creamy and comforting jacket potatoes loaded with tuna, sweetcorn, fresh herbs, and a tangy mayonnaise filling. These potatoes are crispy on the outside and fluffy inside, making a perfect cozy meal that’s quick and easy to prepare.

  • Total Time: 70 minutes
  • Yield: 2 servings

Ingredients

Potatoes

  • 2 large baking potatoes

Filling

  • 1 can tuna in oil (150g drained)
  • 1/3 cup sweetcorn
  • 1 small red chili, finely chopped
  • 2 tablespoons fresh parsley or dill, chopped
  • 3 tablespoons mayonnaise
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (392°F) and line a baking tray with foil or parchment paper to prepare for baking the potatoes.
  2. Prepare Filling: In a mixing bowl, combine the drained tuna, sweetcorn, finely chopped red chili, fresh herbs, and mayonnaise. Season well with salt and pepper and mix until all ingredients are evenly incorporated.
  3. Prepare Potatoes: Scrub the potatoes clean and prick them all over with a fork to allow steam to escape during baking. Place them on the prepared baking tray.
  4. Bake Potatoes: Bake the potatoes in the preheated oven for 50 to 60 minutes, or until they are tender when pierced with a fork.
  5. Scoop Potato Flesh: When potatoes are soft, slice them open lengthwise and carefully scoop out some of the soft potato flesh into a separate bowl, leaving a border to keep the skins intact.
  6. Mix Potato with Filling: Add butter to the scooped potato flesh and mix well. Then fold this creamy mixture back into the tuna filling, stirring thoroughly to combine flavors and achieve a rich texture.
  7. Fill Potatoes: Spoon the tuna and potato mixture back into the potato skins evenly.
  8. Grill to Finish: Place the stuffed potatoes under a grill for 5 minutes to brown the tops, creating a golden and slightly crispy finish.
  9. Serve: Garnish with extra fresh herbs if desired and serve the jacket potatoes hot for a delicious, cozy meal.

Notes

  • Use tuna in oil rather than water for a richer flavor.
  • Grilling the filled potatoes at the end gives a beautiful golden top and enhances the texture.
  • Serve alongside a fresh side salad or pickles to complement the dish.
