Ingredients
Zucchini Preparation
- 1 medium zucchini, cut into 1/2-inch rounds
- 2 teaspoons olive oil
- Cooking spray
Breading Mixtures
- 1/3 cup white whole wheat flour
- 1/4 teaspoon garlic powder
- 1/4 teaspoon sea salt
- 1/8 teaspoon black pepper
- 1 egg
- 1/2 cup Italian bread crumbs (gluten-free if needed)
- 1/4 cup parmesan cheese
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 425 degrees Fahrenheit. Lightly grease a rimmed sheet pan with olive oil or cooking spray and set it aside for the zucchini chips.
- Mix Breading Ingredients: In a medium shallow bowl, combine the Italian bread crumbs and parmesan cheese. In a separate bowl, whisk the egg until smooth. In a third bowl, mix together the white whole wheat flour, garlic powder, sea salt, and black pepper.
- Coat the Zucchini Slices: Dip each zucchini round first into the flour mixture, shaking off any excess. Then, dip it into the beaten egg mixture. Finally, coat the slice thoroughly with the breadcrumb and parmesan mixture. Place each coated zucchini slice onto the prepared baking sheet. Repeat this process for all slices.
- Bake the Chips: Once all zucchini slices are coated and arranged on the baking sheet, place them in the preheated oven. Bake for about 25 minutes until the chips are golden brown and crispy on the edges.
- Serve and Enjoy: Remove the zucchini chips from the oven and let them cool slightly. Serve warm as a flavorful and healthy snack or side dish.
