  • Total Time: 15 minutes
  • Yield: 8 burritos

Ingredients

Main Ingredients

  • 1 15 oz can black beans
  • 1/2 cup corn
  • 1/2 bell pepper, chopped
  • 1/2 onion, chopped
  • 1/4 cup cilantro, chopped
  • 1 tablespoon butter or oil
  • Juice of 1 lime
  • 1.5 cups mozzarella or Mexican blend shredded cheese
  • 2 cups cooked rice (optional)
  • 8 medium flour tortillas

Spices

  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Cooking

  • Oil or cooking spray, for pan

Instructions

  1. Sauté Vegetables and Beans: Heat a large skillet over medium heat. Add black beans, corn, chopped bell pepper, chopped onion, cilantro, butter, lime juice, and the spices (paprika, garlic powder, onion powder, cumin, salt, and black pepper). Sauté for 2-4 minutes on high heat until the mixture is heated through and fragrant. Remove from heat and set aside.
  2. Assemble Burritos: Lay each flour tortilla flat on a plate or counter. Spoon about 1/4 cup of the black bean and vegetable mixture onto the center. Add 1/4 cup cooked rice (if using) and 2-3 tablespoons shredded cheese on top. Leave about 2-3 inches from the corners free to allow wrapping.
  3. Wrap Burritos: Fold over the edges and roll the tortillas tightly to form burritos. Repeat the process for all 8 burritos.
  4. Pan-Fry Burritos: Heat a large skillet or pan over medium heat and add 1 teaspoon of oil. Place the wrapped burritos seam side down in the pan and cook for 1-2 minutes on each side until the tortillas are golden brown and crispy. For grill marks and ridges, use a ridged griddle pan if available.
  5. Serve: Serve the crispy vegetarian burritos warm with sour cream, salsa, creamy cilantro sauce, or a quick 5-minute chipotle sauce for added flavor.

Notes

  • You can leave out the rice for a lower-carb option or substitute with cauliflower rice for a gluten-free variant.
  • Use oil or butter interchangeably based on your preference.
  • To make this recipe vegan, omit the cheese or use a plant-based cheese alternative.
  • Leftover burritos can be refrigerated and reheated in a skillet or oven to maintain crispiness.
  • Add extra veggies like spinach or mushrooms for more nutrient diversity.
