Ingredients
Ingredients
- 2 tbsp (30 ml) oil (vegetable, canola, sunflower, or peanut oil)
- 1/4 medium white onion
- 1 jalapeño
- 1 clove garlic (optional)
- 1 handful cilantro (washed)
- 1 medium avocado (use 2 small ones if needed, preferably Hass for best flavor and creamy texture)
- 1 medium lime (juiced)
- 1/2 tsp salt (or to taste)
Instructions
- Fry: Heat the oil in a small skillet or saucepan until very hot. Add the jalapeño, onion, and garlic (if using). Fry without moving the vegetables too much, allowing them to char on all sides. Flip them once each side is nicely charred to develop a smoky flavor.
- Blend: Transfer the fried jalapeño, onion, garlic, and the residual frying oil into a blender. Add the cilantro, lime juice, avocado, and salt. Blend until the mixture is creamy and smooth. If desired, add a little water to achieve a pourable consistency. Serve fresh for best flavor or store overnight in the refrigerator, noting the sauce may brown slightly due to the avocado.
Notes
- The sauce is best enjoyed fresh but can be refrigerated overnight; expect slight browning from avocado oxidation.
- You can adjust the heat by using fewer or deseeded jalapeños or substituting with milder peppers.
- Add water gradually to control the sauce’s thickness and achieve your preferred consistency.
- Hass avocados are recommended for their creamy texture and rich flavor.
- This sauce pairs well with a wide variety of dishes including meats, fish, fries, tacos, and eggs.
