Ingredients
Gelatin Mixture
- 1.5 cups unsweetened cranberry juice (100% pure, no cocktail)
- 2 tablespoons fresh lemon juice (fresh-squeezed preferred)
- 2 tablespoons unflavored gelatin powder (grass-fed or Knox recommended)
- Optional: A few drops of stevia or monk fruit sweetener to taste
Instructions
- Bloom the gelatin: Pour the unsweetened cranberry juice into a small saucepan. Sprinkle the unflavored gelatin evenly over the surface and let it sit for 5 minutes to bloom and thicken slightly, ensuring a smooth texture.
- Heat and dissolve: Place the saucepan over low heat and gently whisk the mixture until the gelatin fully dissolves. Make sure the liquid is warm but do not let it boil, as boiling can ruin the gelatin’s setting ability.
- Add lemon juice and sweetener: Remove the saucepan from heat, then stir in the fresh lemon juice and, if desired, a few drops of stevia or monk fruit sweetener to taste. Mix thoroughly to combine all ingredients.
- Chill to set: Pour the mixture into a mold or serving containers and refrigerate for at least 2 hours or until completely set and firm.
- Serve and enjoy: Once set, remove the gelatin from the mold if applicable, or serve directly from containers. Enjoy as a low-calorie, satisfying snack that supports weight loss and craving control.
Notes
- Use only 100% unsweetened cranberry juice for the best tart flavor without added sugars.
- Do not boil the gelatin mixture to preserve its setting properties.
- The recipe can be sweetened with stevia or monk fruit to keep it low-calorie and natural.
- Refrigerate for at least 2 hours to ensure the gelatin fully sets.
- This gelatin is best consumed as a late evening snack or dessert alternative to help reduce cravings.
