This Easy No Bake Tres Leches Cake is a luscious and creamy dessert inspired by the classic Latin American treat, made effortlessly without baking. With just five simple ingredients, including sweetened condensed milk, evaporated milk, heavy cream, cardamom for a delicate Rus Malai twist, and ladyfingers, you can create a moist, flavorful cake that requires less than 30 minutes of active preparation and no oven. Perfect for gatherings or a delightful treat, this tres leches cake is topped with whipped cream and optional freeze-dried strawberries and pistachios for added texture and elegance.

  • Total Time: 2 hours 20 minutes
  • Yield: 8-10 servings

Ingredients

Milk Mixture

  • 300g sweetened condensed milk (roughly ¾th of a 14 oz can)
  • 400g evaporated milk (1 14 oz can)
  • 60g heavy cream (¼ cup) - use milk if you want the cake to be lighter
  • ¼ tsp cardamom powder (start with ⅛ tsp, taste and adjust from there)

Cake Base

  • 35-40 ladyfingers (about 1.5 packs with 24 ladyfingers each)

Decoration

  • 1.5 cups heavy cream for decoration
  • Optional: freeze-dried strawberries and pistachios for decoration

Instructions

  1. Prepare Milk Mixture: In a bowl, whisk together the evaporated milk, sweetened condensed milk, and 60g heavy cream until well combined. Add a small amount of cardamom powder, starting with ⅛ teaspoon, then taste and adjust to your preference for a subtle Rus Malai flavor.
  2. Layer Ladyfingers: In a clean 7x11-inch dish, tightly arrange a layer of ladyfingers. Trim any ladyfingers as necessary to fill gaps and create an even layer.
  3. Drench Ladyfingers: Using a ¼ cup measuring cup, evenly pour half of the milk mixture over the ladyfingers, ensuring every ladyfinger is soaked thoroughly. Though it seems like a lot of liquid, the ladyfingers will absorb it fully.
  4. Soak: Allow the soaked ladyfingers to rest for 10 to 20 minutes so they can absorb most of the milk mixture, ensuring a moist and tender cake layer.
  5. Repeat Layers: Create a second layer of ladyfingers on top of the soaked first layer. Pour the remaining half of the milk mixture over this second layer, making sure to saturate all ladyfingers completely.
  6. Chill: Refrigerate the cake for at least 1.5 hours or until fully chilled and the flavors meld together beautifully.
  7. Decorate: Whip 1.5 cups of heavy cream until stiff peaks form, then spread or pipe over the chilled cake. Optionally, garnish with freeze-dried strawberries and chopped pistachios for an elegant finish.

Notes

  • You can substitute the heavy cream in the milk mixture with regular milk to make the cake lighter.
  • Adjust the cardamom powder carefully as it is a strong spice; start small and add more if desired.
  • Make sure to use ladyfingers that are fresh for optimal absorption and texture.
  • The cake benefits from chilling; the longer it sits in the fridge, the better the flavors meld together.
  • Freeze-dried strawberries and pistachios add a nice contrast in texture and visual appeal but are optional.
