  • Total Time: 4 hours 35 minutes
  • Yield: 16 servings

Ingredients

For the Cake

  • 1 box yellow cake mix (15.25 ounces)
  • 1 box instant vanilla pudding mix (3.4 ounces), divided use
  • 1 can crushed pineapple (20 ounces), divided use, do not drain
  • 4 large eggs
  • ½ cup vegetable oil

For the Frosting

  • 8 ounces Cool Whip, thawed
  • 1 jar marshmallow fluff (7 ounces)
  • Reserved 2 tablespoons instant vanilla pudding mix
  • Reserved ½ can crushed pineapple (do not drain)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking pan with nonstick cooking spray and set aside.
  2. Mix Dry Ingredients: In a large bowl, combine the yellow cake mix with all but 2 tablespoons of the instant vanilla pudding mix. Set aside the reserved 2 tablespoons of pudding mix for the frosting.
  3. Add Wet Ingredients and Pineapple: Remove half of the can of crushed pineapple (reserve this half for the frosting). Add the remaining crushed pineapple along with the 4 beaten eggs and ½ cup vegetable oil to the cake mix mixture. Use an electric hand mixer on medium speed to blend until fully combined.
  4. Bake the Cake: Pour the batter evenly into the prepared baking pan. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Cool the Cake: Remove the cake from the oven and transfer to a wire rack. Allow it to cool completely before frosting.
  6. Prepare Frosting: In a mixing bowl, combine the thawed Cool Whip and marshmallow fluff until smooth and fluffy. Stir together the reserved 2 tablespoons of pudding mix and the reserved half can of crushed pineapple, then fold this mixture into the Cool Whip and marshmallow fluff blend until well incorporated.
  7. Frost and Chill: Spread the pineapple frosting evenly over the cooled cake. Cover the cake and refrigerate for at least 3 hours to allow the frosting to set and flavors to meld.

Notes

  • Do not drain the crushed pineapple; the juice adds moisture to both the cake and frosting.
  • For best results, allow the cake to cool completely before applying the frosting to prevent melting.
  • Refrigeration is essential for the frosting to set and the cake to achieve the ideal texture.
  • Use an electric hand mixer to ensure even mixing for a light, consistent batter.
  • Store leftover cake in the refrigerator and consume within 3-4 days for optimal freshness.
