Ingredients
Main Ingredients
- 2 bags Dandies vegan marshmallows
- 3/4 cup vegan butter
- 1 tablespoon almond milk, or milk of choice
- 1 teaspoon vanilla extract
- 2 tablespoons good quality matcha powder, sifted
- 7-8 cups crispy rice cereal
Decoration and Extras
- 8 chocolate covered wafers, cut in half for the stumps
- 1/3 cup vegan white chocolate, to decorate (optional)
- Pink peppercorns or sprinkles, to decorate (optional)
Instructions
- Prepare the Baking Dish: Line a 9" x 13" baking dish with parchment paper and set aside for easy removal of the treats later.
- Melt Butter and Aromatics: In a pot over medium heat, melt the vegan butter. Add the almond milk and vanilla extract, stirring to combine evenly.
- Add and Melt Marshmallows: Add the vegan marshmallows to the pot and stir occasionally until completely melted, noting they will be sticky and thick rather than fully fluid like regular marshmallows.
- Incorporate Matcha Powder: Sift the matcha powder into the melted marshmallow mixture and stir vigorously until fully incorporated; this may require some effort due to the thickness.
- Combine with Cereal: Place the crispy rice cereal into a very large bowl. Pour the marshmallow-matcha mixture over the cereal and stir thoroughly to coat all the cereal evenly.
- Press into Baking Dish: Transfer the mixture into the prepared baking dish. Use a spatula to spread it evenly and press it down gently. Allow it to cool and set for about 30 minutes at room temperature.
- Cut Into Shapes: Once cooled, remove from the baking dish. Cut the slab in half lengthwise, then cut each half into 7 triangular pieces to form tree shapes. Use leftover half triangles by sticking them together and trimming for complete pieces, making a total of 8 triangles per half.
- Decorate: If using, melt the vegan white chocolate and pipe decorations onto the rice krispie trees. Attach chocolate covered wafer halves as stumps using melted white chocolate. Finish by adding pink peppercorns or sprinkles as festive toppers.
- Storage: Store the finished treats in a sealed container at room temperature or in the refrigerator for up to 5 days to maintain freshness and texture.
Notes
- Any crispy rice cereal works; adjust quantity for texture preference: 7 cups for softer, gooier treats and 8 cups for firmer treats.
- The chocolate covered wafer cookies for the stumps are optional and can be substituted with any chocolate or cookie of choice.
- Melting vegan marshmallows takes longer and produces a stickier texture than traditional marshmallows, so patience and stirring are key.
