  • Total Time: 1 hour 50 minutes
  • Yield: 12 servings

Ingredients

Dough Ingredients

  • 4 1/2 tablespoons (60 g) unsalted butter
  • 2 tablespoons minced garlic
  • 3 1/2 cups + 1 tablespoon (434 g) all-purpose flour
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon (15 g) granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup (225 g) whole or 2% milk, warmed to 110°F (43°C)
  • 1 large egg, room temperature (about 55 g)
  • 1 beaten egg, for brushing the tops

Garlic Butter Topping

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt, for finishing

Instructions

  1. Prepare Baking Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set aside to prevent sticking and help with even baking.
  2. Make Garlic Butter for Dough: In a small pot over low heat, melt 4 1/2 tablespoons unsalted butter. Add 2 tablespoons minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and cool slightly to prevent cooking the yeast later.
  3. Combine Dry Ingredients: In a stand mixer bowl, whisk together 3 1/2 cups plus 1 tablespoon all-purpose flour, 3 tablespoons chopped fresh parsley, 1 tablespoon granulated sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon fine sea salt.
  4. Add Wet Ingredients: Add the warmed milk (110°F), 1 large room temperature egg, and the cooled garlic butter mixture to the dry ingredients. Using the dough hook on low speed, knead the mixture for 10-12 minutes until the dough is smooth, soft, and slightly tacky. If too sticky, add flour 1 tablespoon at a time until manageable dough forms.
  5. Shape Rolls: Divide the dough into 12 equal portions of about 67 grams each using a scale for accuracy. Shape each portion into a smooth ball, pinching the bottom seam to secure. Arrange the shaped rolls evenly in the prepared pan.
  6. First Rise: Cover the pan with plastic wrap or a clean kitchen towel. Let the dough rise in a warm place until doubled in size, approximately 1 to 2 hours.
  7. Preheat Oven: Preheat the oven to 350°F (180°C) during the last 15 minutes of rising.
  8. Brush Egg Wash: Once risen, brush the tops of the rolls evenly with the beaten egg wash to encourage browning and shine.
  9. Bake: Bake the rolls in the preheated oven for 20-30 minutes, or until the tops turn golden brown and the rolls sound hollow when tapped.
  10. Prepare Garlic Butter Topping: While the rolls bake, melt 2 tablespoons unsalted butter in a small pan. Stir in 1 tablespoon minced garlic and 1 tablespoon chopped fresh parsley, cooking just until fragrant. Remove from heat to avoid burning.
  11. Finish Rolls: Remove the rolls from the oven and immediately brush them generously with the prepared garlic herb butter. Sprinkle with flaky sea salt to taste.
  12. Serve: Let the rolls cool slightly before serving warm for maximum flavor and softness.

Notes

  • Ensure milk is warmed to about 110°F to activate the yeast without killing it.
  • If your dough feels too sticky, add flour gradually while kneading to get a workable texture.
  • Using a kitchen scale to portion dough ensures even-sized rolls and consistent baking.
  • For best garlic flavor, do not skip brushing the garlic herb butter after baking.
  • These rolls freeze well; cool completely, wrap tightly, and freeze. Reheat by warming in the oven wrapped in foil.
