Ingredients
Vegetables & Herbs
- 4 cups Fresh Spinach (can substitute with frozen spinach)
- 3 cups Plum Tomatoes (canned can be used for convenience)
- 2 whole Habanero Chillies (substitute with Scotch bonnet or red bell peppers for milder heat)
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 1 medium Onion, sliced
Condiments & Spices
- 2 tablespoons Tomato Paste
- 1 teaspoon Smoked Paprika
- Salt, to taste
- Oil, for sautéing (about 1-2 tablespoons)
Instructions
- Prepare the aromatics: In a large pan, heat a drizzle of oil over medium heat. Add minced garlic, grated ginger, sliced onions, and chopped habanero chillies. Sauté for 2-3 minutes until fragrant and the onions become translucent.
- Develop the tomato base: Stir in the tomato paste and cook for 1 minute to release its robust flavors before adding additional ingredients.
- Simmer the tomato sauce: Add smoked paprika and chopped plum tomatoes along with their juices. Season with salt, cover, and simmer for 10-15 minutes until the sauce thickens and flavors meld beautifully.
- Add and wilt the spinach: Roughly chop the fresh spinach and stir it into the simmering sauce. Cover and cook for another 2-4 minutes until the spinach wilts and brightens in color.
- Serve: Serve the Ghanaian Spinach Stew warm, ideally with rice or baked plantains to enjoy a complete and satisfying meal.
Notes
- For a milder stew, replace habanero chillies with red bell peppers or a milder chili variety.
- Frozen spinach can be used if fresh is unavailable, but fresh provides better texture and flavor.
- Adjust the amount of oil based on your dietary preferences or substitute with a healthier oil like avocado oil.
- This stew can be refrigerated for up to 3 days and reheated gently on the stovetop.
- To increase protein content, consider serving with a side of beans or legumes.
