Ingredients
Seafood
- 300g peeled shrimp
- 200g fresh scallops
- 300g fresh mussels
Sauce
- 1 finely chopped shallot
- 15 cl dry white wine
- 25 cl thick fresh cream
- 20g unsalted butter
- 1 level tablespoon flour
- Salt to taste
- Freshly ground pepper to taste
- Portion of reserved mussel cooking juice (about 5 cl)
Topping
- 100g grated cheese (such as Gruyère or Emmental)
- Freshly chopped parsley for garnish
Instructions
- Clean the Mussels: Thoroughly wash the fresh mussels under cold water to remove any grit or debris.
- Cook Mussels: Fill a saucepan with one-third of the white wine (about 5 cl) and bring it to a boil. Add the mussels, cover with a lid, and cook for 5 to 7 minutes until all the shells have opened fully.
- Prepare Mussels: Carefully remove the mussels from their shells and place the meat into a bowl. Strain the cooking liquid through a fine sieve and set aside for later use in the sauce.
- Prepare Other Seafood: Rinse the peeled shrimp and fresh scallops under cold water, then pat dry thoroughly with paper towels.
- Make the Sauce Base: In a spacious pan, melt the unsalted butter over medium-low heat. Add the finely chopped shallot and sweat gently for 2 to 3 minutes, avoiding any browning to preserve delicate flavor.
- Deglaze and Reduce: Pour in the remaining white wine (about 10 cl), increase the heat slightly, and reduce the liquid by half to concentrate the flavors.
- Thicken the Sauce: Add the flour to the pan and stir vigorously for about one minute to cook out the raw flour taste.
- Add Cream and Stock: Gradually whisk in the thick fresh cream while stirring constantly to avoid lumps. Pour in a portion of the reserved mussel cooking juice to infuse the sauce with a maritime aroma.
- Season and Simmer: Add salt and freshly ground pepper to taste. Let the sauce simmer gently for 5 minutes until it thickens to a creamy consistency.
- Assemble the Gratin: Distribute the shrimp, scallops, and mussels evenly into individual porcelain ramekins or small gratin dishes.
- Pour Sauce Over Seafood: Generously spoon the creamy white wine sauce over the seafood in each ramekin.
- Add Cheese Topping: Sprinkle a thick layer of grated cheese evenly on top of each dish to ensure a golden crust after baking.
- Preheat Oven: Set oven temperature to 200°C (400°F) to prepare for gratinating.
- Bake the Gratin: Place the casseroles on a baking tray and bake in the preheated oven for 10 to 15 minutes, until the cheese topping is melted, bubbling, and golden brown.
- Garnish and Serve: Carefully remove the dishes from the oven and sprinkle freshly chopped parsley over the gratin just before serving to add a fresh aroma and color contrast.
Notes
- Ensure mussels are fresh and discard any that do not open after cooking.
- Use a good-quality dry white wine for the best flavor.
- Gruyère or Emmental cheese works well for the gratin topping due to their melting and browning properties.
- You can prepare the sauce ahead of time but add seafood just before baking to avoid overcooking.
- Serve immediately for the best texture and taste.
