Ingredients
Main Ingredients
- 1 cup Cottage Cheese
- 4 cups Fresh Spinach
- 6 Large Eggs
- 1 cup Shredded Cheese (sharp cheddar or mozzarella)
- 1 Onion (finely diced)
- 2 cloves Garlic (minced)
- 1/2 cup Milk or Cream (whole milk or half-and-half)
- Salt (to taste)
- Pepper (to taste)
- Pinch of Nutmeg
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C). Grease a 9-inch pie plate or an 8×8 inch baking dish with butter or cooking spray to prevent sticking during baking.
- Sauté onions and garlic: Heat a tablespoon of olive oil or butter in a medium skillet over medium heat. Add finely diced onion and sauté for 5-7 minutes until softened and translucent. Add minced garlic and cook for an additional minute until fragrant.
- Cook spinach: Add fresh spinach to the skillet with onions and garlic. Cook until the spinach is wilted. Transfer it to a colander and squeeze out as much excess water as possible to avoid a watery quiche.
- Prepare egg mixture: In a large mixing bowl, whisk the 6 large eggs until well beaten. Add drained cottage cheese, milk or half-and-half, salt, pepper, and a pinch of nutmeg. Whisk together until fully combined.
- Combine all ingredients: Add the squeezed spinach, sautéed onion and garlic, and shredded cheese to the egg mixture. Stir gently until everything is evenly distributed.
- Pour and settle mixture: Pour the quiche mixture into the prepared baking dish. Gently tap the dish on the counter to help the mixture settle evenly.
- Bake: Bake the quiche in the preheated oven for 40-50 minutes until the center is set and a knife inserted comes out clean. The top should develop a golden brown color.
- Cool and serve: Remove from oven and let the quiche cool on a wire rack for 10-15 minutes before slicing. This rest time ensures cleaner slices and better texture. Serve warm or at room temperature.
Notes
- Squeeze out excess moisture from the spinach thoroughly to prevent a watery quiche.
- Ensure the baking dish is well-greased to avoid sticking and ease serving.
- You can customize this quiche by adding other vegetables like mushrooms, bell peppers, or herbs such as basil or thyme.
- This dish makes excellent leftovers and can be reheated gently in the oven or microwave.
- Using half-and-half or cream will make the quiche richer; whole milk is a lighter alternative.
