These healthy St. Patrick's Day truffles are naturally green from matcha, no-bake, and made with simple wholesome ingredients. A festive, better-for-you dessert that's perfect for celebrating with a smooth white chocolate coating and customizable toppings.

  • Total Time: 50 minutes
  • Yield: 14 truffles

Ingredients

Matcha Truffle Centers

  • 1 ½ cups almond flour
  • 2 tablespoons matcha powder
  • 3 tablespoons maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Coating

  • 1 cup white chocolate chips or dairy-free white chocolate
  • 1 teaspoon coconut oil

Optional Toppings

  • Green sprinkles
  • Crushed pistachios
  • Shredded coconut
  • Gold sugar pearls

Instructions

  1. Make the matcha filling: In a mixing bowl, combine almond flour, matcha powder, and salt. Add maple syrup, melted coconut oil, and vanilla extract. Stir everything together until a soft, pliable dough forms.
  2. Roll into truffles: Using a tablespoon scoop, portion out the dough and roll each portion into a ball with your hands. Place the truffles on a parchment-lined tray and freeze them for 15-20 minutes until firm.
  3. Melt the chocolate: In a microwave-safe bowl, melt white chocolate chips with coconut oil in 20-second intervals, stirring after each interval until the mixture is fully smooth and melted.
  4. Coat the truffles: Using a fork, dip each chilled truffle into the melted chocolate, tapping off any excess coating. Place the coated truffles back onto the parchment paper.
  5. Decorate: Before the chocolate coating sets, decorate each truffle with your choice of green sprinkles, crushed pistachios, shredded coconut, or gold sugar pearls for a festive look.
  6. Chill to set: Refrigerate the decorated truffles for 10-15 minutes until the chocolate hardens. Serve chilled or allow to soften slightly before enjoying.

Notes

  • Use culinary-grade matcha powder for the best flavor and vibrant green color.
  • If the dough feels too dry, add 1 teaspoon more melted coconut oil to achieve the right consistency.
  • If the mixture is too sticky, incorporate a little more almond flour until manageable.
  • Store the truffles in the refrigerator for up to 1 week or freeze for up to 2 months for longer storage.
