Ingredients
Dip Ingredients
- 4 ounces (113g) cream cheese, softened to room temperature
- 6 tablespoons Thousand Island or Russian dressing, plus more for topping
- 1 (14.5 oz) can sauerkraut, drained
- 8 ounces corned beef, chopped
- 8 ounces Swiss cheese, shredded (divided, about 4 ounces for mixing and 4 ounces for topping)
To Serve
- Rye bread, sliced for dipping
Instructions
- Preheat Oven: Set your oven to 400ºF (204ºC) to prepare it for baking the dip.
- Mix Ingredients: In a large bowl, combine the softened cream cheese, 6 tablespoons of Thousand Island or Russian dressing, drained sauerkraut, chopped corned beef, and half of the shredded Swiss cheese (about 4 ounces). Stir thoroughly using a spatula or large spoon until all ingredients are well incorporated.
- Assemble Dip: Pour the prepared mixture into a 9-10 inch cast iron skillet, spreading it evenly. Drizzle a little additional Thousand Island dressing over the top if desired, then sprinkle the remaining shredded Swiss cheese evenly over the dip.
- Bake the Dip: Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese on top is melted and starts to bubble.
- Cool and Serve: Remove the skillet from the oven and let the dip cool for about 10 minutes. Serve warm with sliced rye bread, crackers, or fresh vegetables for dipping. The dip can also be enjoyed cold.
- Storage: Store any leftovers covered in the refrigerator for up to 3 days. For longer storage, the dip freezes well for up to 3 months. It’s best to freeze it unbaked, thaw overnight in the refrigerator, and then bake as directed.
Notes
- You can substitute Thousand Island dressing with Russian dressing depending on your preference.
- Using a cast iron skillet adds excellent heat distribution but a similar sized oven-safe dish will work.
- Dip can be served warm or cold; reheating is optional if served cold.
- Freezing the dip before baking preserves texture and flavor best.
- Serve with toasted rye bread for the most authentic Reuben experience.
