Ingredients
Brownies
- 7 ounces unsweetened chocolate, roughly chopped
- 3/4 cup unsalted butter
- 1/4 cup water
- 1 cup sugar
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/8 teaspoon salt
Fruit
- 2 pints raspberries
Whipped Cream
- 1 1/2 cups chilled heavy cream
- 1/3 cup sour cream
- 3 tablespoons sugar
- 2 teaspoons vanilla extract
Garnish
- Mini chocolate chips, for garnish
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350ºF. Grease a 9-inch baking dish thoroughly with cooking spray to prevent sticking and set it aside.
- Melt Chocolate and Butter: In a medium saucepan over medium-low heat, combine the chopped unsweetened chocolate, unsalted butter, and water. Stir continuously until both the chocolate and butter have fully melted into a smooth mixture.
- Mix Sugars and Eggs: Transfer the melted chocolate mixture into the bowl of a stand mixer fitted with the paddle attachment. Add the granulated sugar and light brown sugar, mixing until combined. Then add the eggs and vanilla extract, beating the mixture on medium speed for about 2 minutes until smooth and well incorporated.
- Add Dry Ingredients: Gradually add the all-purpose flour and salt to the batter. Mix until just combined without overmixing to keep brownies tender.
- Bake Brownies: Pour the batter into the prepared baking dish and place in the oven. Bake for 25 to 30 minutes, or until a toothpick inserted near the center comes out clean. Remove the pan and place it on a cooling rack.
- Cool and Cut Brownies: Once cooled completely, invert the brownies onto a cutting board and cut into 1/2-inch square croutons, perfect for layering.
- Whip Cream Mixture: Using a stand mixer fitted with the whisk attachment, combine chilled heavy cream, sour cream, sugar, and vanilla extract. Whisk on high speed until soft peaks form, creating a rich and slightly tangy whipped cream.
- Assemble Trifles: In individual serving dishes, layer brownie croutons, followed by a generous spoonful of whipped cream, then fresh raspberries. Repeat layering as desired.
- Garnish and Serve: Top each trifle with mini chocolate chips for a delightful finishing touch. Serve immediately to enjoy the fresh textures and flavors.
Notes
- Ensure the brownies are completely cooled before cutting to maintain their shape when layering.
- You can substitute raspberries with other fresh berries like strawberries or blueberries based on preference and seasonality.
- For a lighter option, use reduced-fat sour cream or omit it and increase heavy cream slightly.
- These trifles are best served immediately to preserve the texture of the whipped cream and fresh fruit.
- Leftovers should be stored in the refrigerator and consumed within 1-2 days as the whipped cream and fruit can lose freshness.
