Ingredients
For the Muffins
- 2 cups Kodiak Pancake Mix or Kodiak Muffin Mix
- 1 package Jimmy Dean Maple Sausage, cooked and chopped
- 2 large Eggs
- 1 cup Fairlife Milk or any milk (almond milk for dairy-free option)
- 1/4 cup Maple Syrup (adjust to taste)
- 1 cup Shredded Cheese (cheddar or mozzarella)
Optional Add-ins
- 1/4 cup Flax Seeds (for fiber and extra protein)
- 1 cup Chopped Spinach (for added nutrition)
- Herbs and Spices like garlic powder or chives (to taste)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and spray a muffin pan with nonstick cooking spray to prevent sticking.
- Mix the Batter: In a large mixing bowl, whisk together the Kodiak pancake mix, eggs, Fairlife milk, and maple syrup until the batter is smooth and well combined.
- Add Sausage and Cheese: Fold in the cooked and chopped Jimmy Dean maple sausage and shredded cheese until they are evenly distributed throughout the batter.
- Fill the Muffin Tins: Pour the mixture into the prepared muffin tins, filling each cup about three-quarters full to allow room for rising.
- Bake: Place the muffin pan in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Cool and Remove: Let the muffins cool for about 5 minutes, then gently loosen them from the edges of the pan and transfer to a wire rack to cool completely before serving.
Notes
- You can substitute the sausage with turkey sausage for a leaner option.
- Adding flax seeds and spinach boosts nutrition but can be omitted if preferred.
- Maple syrup amount can be adjusted to control sweetness levels.
- These muffins can be stored in an airtight container and refrigerated for up to 3 days or frozen for longer storage.
- Reheat muffins in a microwave or toaster oven for a quick breakfast.
