These Italian honey cookies offer a delightful, subtly sweet treat perfect for breakfast or teatime. Made with butter, honey, and a touch of milk, they have a delicate crisp exterior and a soft, tender center. Their traditional honey infusion brings classic Italian flavor in a simple, easy-to-make recipe that’s ideal for dunking in milk or tea.

  • Total Time: 22 minutes
  • Yield: 24 cookies

Ingredients

Ingredients

  • 100 g butter, softened
  • 120 g sugar
  • 1 egg
  • 80 ml milk
  • 100 g light honey
  • 500 g all-purpose flour
  • 1 tablespoon baking powder

Instructions

  1. Mix butter and sugar: Place softened butter and sugar into a large mixing bowl. Using a hand mixer or stand mixer on medium speed, beat for 1-2 minutes until the mixture is pale yellow, light, and fluffy.
  2. Add wet ingredients: Whisk in the egg, then gradually add the milk and honey, mixing until all ingredients are fully combined.
  3. Add dry ingredients and knead dough: Sift the flour and baking powder over the mixture using a sieve. Fold in the flour with a spatula, then transfer the dough onto a work surface. Knead with your hands until the dough is smooth and cohesive.
  4. Roll out the dough: Roll the dough between two large sheets of parchment paper to about 3mm (1/8 inch) thickness, ensuring an even surface for the cookies.
  5. Create typical lines and cut cookies: Using a well-floured gnocchi board or the back of a bread knife, gently press to create shallow lines in the dough without cutting through. Then cut the dough with a knife into rectangular shapes to form the cookies.
  6. Chill the dough: Transfer the cut cookies to a baking tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Preheat oven and bake: Preheat your oven to 180°C (360°F) and place the baking tray on the middle rack. Bake the cookies for 12-15 minutes until they have a slightly crispy, golden top but remain soft inside.
  8. Cool and serve: Move the cookies to a cooling rack to cool completely before serving. Enjoy dunked in milk or tea for the perfect Italian breakfast experience.
