Ingredients
Frozen Banana Mixture
- 1 ripe medium banana, peeled and sliced into 1/4-inch thick rounds
- 4 ounces 100% pineapple juice
- 4 ounces coconut cream (not coconut milk)
- 1 cup ice
Strawberry Rum Mixture
- 3/4 cup halved frozen or fresh strawberries (about 3 ounces, do not thaw if frozen)
- 2 1/2 ounces coconut rum
- 2 1/2 ounces light rum
Garnishes (optional)
- 2 maraschino cherries
- 2 slices pineapple
Instructions
- Freeze Banana Slices: Line a baking sheet or plate with parchment paper or a silicone baking mat. Peel and slice 1 ripe medium banana into 1/4-inch thick rounds. Arrange the slices in a single layer on the sheet and freeze until solid, about 1 hour.
- Chill Glasses: Place 2 large glasses in the freezer to chill while preparing the cocktails.
- Blend Banana Mixture: Transfer the frozen banana slices into a high-speed blender. Add 4 ounces pineapple juice, 4 ounces coconut cream, and 1 cup ice. Blend on high speed until smooth and creamy, about 1 minute.
- Divide Banana Mixture: Pour the banana mixture evenly between the chilled glasses. Return the glasses to the freezer to keep the mixture cold.
- Blend Strawberry Rum Mixture: Quickly rinse the blender to remove the banana mixture residue. Add 3/4 cup halved strawberries, 2 1/2 ounces coconut rum, and 2 1/2 ounces light rum. Blend on high until smooth, about 2 minutes.
- Create Lava Flow Effect: Slowly pour and divide the strawberry rum mixture between the glasses over the banana mixture. The strawberry layer will cascade and combine with the banana layer, creating a lava-like swirl.
- Garnish and Serve: Garnish each glass with a slice of fresh pineapple and a maraschino cherry if desired. Serve immediately with a straw for stirring and sipping.
Notes
- Make ahead: Freeze the banana slices up to several weeks in advance by transferring solid slices to a resealable zip-top bag and keeping them frozen.
- Ingredient Variation: For added flavor and texture, blend 1 ounce frozen pineapple chunks into the strawberry rum mixture.
