Ingredients
Dry Ingredients
- ½ cup almond meal or almond flour
- ½ cup unsweetened desiccated coconut
- 1 tablespoon coconut flour
- 2 tablespoons hemp hearts (optional)
- 2 tablespoons ground chia seeds
- 1 teaspoon ground cinnamon
Wet Ingredients & Flavorings
- 1-2 teaspoons monkfruit blend or Sweet Leaf liquid stevia drops (adjust to taste)
- ½ teaspoon vanilla extract (optional)
- 2 cups coconut milk or milk of choice
- ½ cup frozen or fresh blueberries
Instructions
- Combine Ingredients: In a large breakfast bowl or small saucepan, combine the almond meal, desiccated coconut, coconut flour, hemp hearts (if using), ground chia seeds, ground cinnamon, sweetener, vanilla extract (if using), coconut milk, and blueberries, mixing well to blend.
- Microwave Cooking: Cover the bowl with cling wrap and microwave on high for 2-3 minutes, or until the porridge thickens to your desired consistency.
- Stovetop Cooking: Alternatively, cook the mixture over medium heat in a saucepan, stirring frequently, for about 5 minutes until thick and creamy.
- Adjust Consistency: If the porridge is too thick, thin it out with additional coconut milk or water, either while cooking or after serving.
- Overnight Soaking (Optional): Soak the porridge mixture overnight in the refrigerator to reduce cooking time and improve texture; reheat gently before serving and add extra milk if it becomes too thick.
Notes
- Adjust sweetener quantity based on your preference; you can also sprinkle sweetener on top after serving.
- Serve topped with coconut cream, low carb nut milk, additional berries, coconut flakes, sugar-free maple syrup, or low carb granola for extra flavor and texture.
- This porridge reheats well in the microwave and keeps in the refrigerator for up to 5 days.
- If the porridge thickens too much after storage, add more milk of choice to loosen it.
- Add blueberries towards the end of cooking if using frozen to avoid staining and preserve freshness.
- Flavored Sweet Leaf stevia drops (e.g., vanilla or coconut) can be used for subtle taste variations.
