Ingredients
Brownie Base
- 1 1/4 cups (285 g) unsalted butter
- 2 ounces semi-sweet chocolate, chopped
- 1 1/2 cups (300 g) light brown sugar, packed
- 3/4 cup (150 g) granulated sugar
- 4 large eggs, room temperature
- 1 cup (100 g) Dutch process cocoa powder
- 1/2 teaspoon salt
- 3 teaspoons vanilla extract
- 3/4 cups (95 g) all-purpose flour, spooned and leveled
Topping
- 2/3 cup M&M chocolate candies
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Spray the bottom of an 8 x 8 inch baking pan with non-stick baking spray and line it with parchment paper, allowing the sides to hang over for easy removal later.
- Melt Butter and Chocolate with Sugars: Using a double boiler setup, melt the unsalted butter, chopped semi-sweet chocolate, light brown sugar, and granulated sugar in a heat-safe bowl over medium-low heat. Stir frequently until the mixture is melted, grainy but glossy. Remove from heat and allow to cool slightly.
- Add Eggs: Whisk in the eggs one at a time, making sure each is fully incorporated before adding the next. Continue whisking until the batter is lightened in color, smooth, and shiny.
- Incorporate Cocoa, Salt, and Vanilla: Stir in the Dutch process cocoa powder, salt, and vanilla extract until fully combined.
- Add Flour: Fold in the all-purpose flour gently with a large spatula until just a few streaks of flour remain; avoid overmixing to maintain fudginess.
- Prepare to Bake: Pour the batter into the prepared baking pan and level the surface using an offset spatula.
- Add M&M’s Topping: Evenly sprinkle the M&M chocolate candies over the top of the batter.
- Bake: Bake in the preheated oven for 45 to 50 minutes, or until the edges are set and a toothpick inserted about two inches from the side comes out with just a few moist crumbs. Avoid overbaking to keep brownies fudgy.
- Cool and Slice: Remove from oven and place the pan on a wire rack to cool completely before lifting out using parchment overhang and slicing into 16 squares.
Notes
- Store brownies tightly covered in a cool, dry place to maintain freshness.
- You can freeze the brownies for up to 2 months; thaw at room temperature before serving.
- Using room temperature eggs ensures better incorporation and texture.
- Do not overmix the batter once flour is added to keep brownies dense and fudgy.
- The double boiler method prevents chocolate and butter from burning.
