Masala French Toast is a savory twist on the classic brunch favorite, featuring eggs mixed with finely minced onions, green chili, turmeric, cilantro, and milk. This flavorful Indian-inspired toast is quick to prepare, taking just 20 minutes from start to finish, and is perfect for a delicious breakfast or lunch served with ketchup and cilantro mint chutney.

  • Total Time: 20 minutes
  • Yield: 2 servings

Ingredients

Egg Mixture

  • 2 large eggs
  • 2 tablespoons red onion, finely minced
  • 1 teaspoon green chili, finely minced (jalapeno or other spicy chili works too)
  • ¼ teaspoon ground turmeric
  • ½ teaspoon kosher salt
  • 2 tablespoons cilantro, finely chopped
  • ⅓ cup milk or water

Toast

  • 2 slices bread (sourdough, multigrain or whole wheat)

To Serve

  • 2 tablespoons ketchup
  • ¼ cup cilantro mint chutney

Instructions

  1. Prepare the egg mixture: In a wide bowl large enough to fit the bread slices, whisk together the finely minced red onion, green chili, ground turmeric, kosher salt, chopped cilantro, and milk. Add the 2 large eggs and whisk for about a minute until fully combined.
  2. Soak the bread: Dip one slice of bread into the egg mixture, gently pressing down with a fork to help the bread absorb the mixture. Flip and repeat on the other side, ensuring both sides are evenly soaked.
  3. Heat the pan: Warm a non-stick or cast iron pan over medium heat and apply ½ teaspoon of oil evenly.
  4. Cook the first side: Place the soaked bread slice carefully onto the pan. Spoon a little extra of the egg-onion mixture from the bowl over the bread's top side. Cook for about one minute, or until the bottom side turns golden brown.
  5. Cook the other side: Flip the bread and cook for another minute until golden brown on this side as well.
  6. Repeat for the second slice: Repeat the soaking and cooking process with the second bread slice.
  7. Serve: Serve the masala French toast hot, accompanied by ketchup and cilantro mint chutney for dipping.

Notes

  • Use sourdough, multigrain, or whole wheat bread for best texture and flavor.
  • Adjust the amount of green chili based on your spice preference.
  • Using a non-stick or cast iron pan prevents sticking and ensures even cooking.
  • Serve immediately for best taste and texture, as the toast is best enjoyed hot.
  • You can substitute milk with water or a dairy-free alternative if preferred.
