Mini Chicken Fajita Pizzas feature tender, seasoned chicken fajita topping served on lightly toasted King's Hawaiian slider buns, topped with melted cheese and a zesty pizza sauce. This recipe offers a spicy and flavorful twist on traditional pizza, perfect for snacks, appetizers, or a fun meal.

  • Total Time: 30 minutes
  • Yield: 24 mini pizzas

Ingredients

Chicken Fajita Topping:

  • 1 lb chicken tenders, cubed
  • 1 small or ½ large yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 tbsp olive oil + extra for frying
  • 1-2 tsp salt
  • 1 ½ tsp cayenne pepper
  • 1 ½ tsp paprika
  • 1 tsp chili flakes
  • 2 tsp garlic powder
  • Juice of ½ lemon

Assembly:

  • ~¾ cup pizza sauce
  • 2 cups shredded cheese (combination of Mozzarella and Mexican Blend recommended)
  • 12 King's Hawaiian Original Hawaiian Slider Buns, separated into 24 halves

Instructions

  1. Prepare Chicken Fajita Topping: In a bowl, combine the cubed chicken, thinly sliced onion and bell peppers with 2 tablespoons of olive oil and all the seasonings: salt, cayenne, paprika, chili flakes, and garlic powder. Mix well to coat evenly.
  2. Cook the Fajita Mixture: Heat additional olive oil in a large frying pan over medium-high heat. Add the seasoned chicken and vegetable mixture and cook for about 10 minutes. Stir occasionally until the chicken is fully cooked and the vegetables are slightly charred and caramelized. Taste and adjust seasoning if needed, then finish by stirring in the juice of half a lemon.
  3. Preheat Oven and Toast Buns: Preheat your oven to 350°F (177°C). Arrange the slider bun halves on a large, preferably light-colored baking sheet. Bake for 5 minutes to lightly toast the buns.
  4. Assemble the Pizzas: Increase the oven temperature to 400°F (204°C). Spread a modest amount of pizza sauce onto each toasted bun half, being careful not to use too much to avoid sogginess. Sprinkle shredded cheese generously over the sauce, then top each with a spoonful of the warm chicken fajita topping. Optionally, add thin bell pepper slices on top for extra color and crunch.
  5. Bake Until Cheese Melts: Return the baking sheet to the oven and bake for a few minutes until the cheese melts completely. Watch closely to prevent the buns from burning, especially on the bottoms.
  6. Garnish and Serve: Remove the mini pizzas from the oven, optionally garnish with parmesan cheese, then serve hot and enjoy immediately.

Notes

  • The chicken fajita topping can be made ahead and stored for use in tacos, quesadillas, or sandwiches.
  • Adjust cayenne and chili flakes according to your preferred spice level.
  • Use a light-colored baking sheet to evenly toast the buns and prevent burning.
  • Be careful not to over-sauce the buns to avoid sogginess.
  • Optional parmesan garnish adds extra flavor but can be omitted.
