Ingredients
Main Ingredients
- 8–10 corn or flour tortillas (street-taco size)
- 2 cups cooked shredded chicken
- 1 can refried beans (black or pinto)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil or cooking spray
- Salt, chili powder, and garlic powder to taste
Optional Toppings
- Pico de gallo
- Avocado slices
- Lettuce
- Sour cream
- Jalapeños
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper to prevent sticking and make cleanup easier.
- Prepare the tortillas: Warm the tortillas slightly to make them pliable. Then, brush both sides of each tortilla with olive oil or cooking spray to help them crisp up in the oven.
- Assemble tostadas: Spread a thin layer of refried beans evenly over each tortilla. Next, top with shredded chicken and sprinkle with shredded cheese. Season lightly with salt, chili powder, and garlic powder to taste.
- Arrange on sheet pan: Lay the assembled tortillas in a single layer on the prepared sheet pan ensuring they aren’t overlapping for even baking.
- Bake: Place the sheet pan in the oven and bake for 8–10 minutes, until the edges of the tortillas turn golden brown and the cheese has melted beautifully.
- Cool slightly: Remove from the oven and let the mini tostadas cool for 2–3 minutes on a wire rack to maintain crispiness and prevent sogginess.
- Add toppings and serve: Garnish with your choice of pico de gallo, avocado slices, lettuce, sour cream, and jalapeños. Serve warm for a delicious, light Mexican-American meal.
Notes
- For extra crispy tostadas, pre-bake the tortillas for 3–4 minutes before assembling.
- Using rotisserie chicken is a great time-saver and adds extra flavor.
- Store baked tortillas separately from toppings to maintain crisp texture when reheating or serving later.
- Cooling the tostadas on a wire rack helps avoid sogginess by allowing air circulation.
- Customize the recipe by swapping chicken for BBQ chicken, opting for vegetarian beans, or adding different toppings to suit your taste.
