Ingredients
Wet Ingredients
- ½ cup unsalted butter (113g)
- 2 tbsp vegetable oil (25g)
- ¾ cup light brown sugar, packed (150g)
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp instant coffee dissolved in 1 tsp hot water
- 4 extra ripe bananas, mashed (about 440g)
- ½ cup Greek yogurt (120g)
Dry Ingredients
- 1 ¾ cups all purpose flour (227g)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
Add-ins
- 1 ½ cup chocolate chips or chopped chocolate (300g), semi-sweet or dark recommended
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 340°F (171°C) and line an 8.5 x 4.5 or 9 x 4 inch loaf pan with parchment paper to prevent sticking.
- Brown the Butter: Place the cubed butter in a saucepan over medium-low heat. Cook and stir for about 5-8 minutes as the butter melts, becomes bubbly and foamy, and then develops brown specks with a caramel aroma. Be careful not to burn it.
- Combine Butter, Oil, and Sugar: Pour the browned butter into a large bowl. Add the vegetable oil and brown sugar, then whisk briskly for 1-2 minutes to combine and slightly dissolve the sugar. Let cool for 5 minutes if the mixture is too warm.
- Add Eggs, Vanilla, and Coffee: Whisk in the eggs, vanilla extract, and the dissolved instant coffee. Continue whisking for another 1-2 minutes until the batter lightens in color and is smooth.
- Incorporate Bananas and Yogurt: Add the mashed bananas and Greek yogurt to the bowl, whisking until the mixture is thoroughly combined and creamy.
- Add Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, and salt. Gently whisk these into the wet mixture until just combined, ensuring no flour lumps remain but being careful not to overmix.
- Fold in Chocolate Chips: Carefully fold in the chocolate chips or chopped chocolate, distributing them evenly throughout the batter without overworking it.
- Fill the Pan and Optional Topping: Pour the batter into the prepared loaf pan. If desired, sprinkle additional chocolate chips on top. If concerned about overflow, remove about ½ cup of batter to bake separately as muffins.
- Bake: Bake in the preheated oven for 65 to 75 minutes. The bread is done when a toothpick inserted in the center comes out with light crumbs but no wet batter.
- Cool and Serve: Remove the banana bread from the oven and let it cool completely in the pan to set. Once cooled, remove from pan, slice, serve, and enjoy your delicious banana bread.
Notes
- Brown butter adds a nutty depth of flavor that elevates classic banana bread.
- The hint of coffee intensifies the chocolate notes without overpowering the banana flavor.
- Using extra ripe bananas ensures maximum natural sweetness and moisture.
- Greek yogurt adds moisture and a slight tang for balanced flavor and texture.
- Be careful not to overbake to keep the bread moist; check with a toothpick near the minimum time.
- Allow the bread to cool fully in the pan for best slicing results; warm banana bread can crumble.
- You can substitute with chocolate chunks or a mix of semi-sweet and dark chocolate per preference.
