The dish is enriched with garlic, onion, white miso, and balsamic vinegar, creating a depth of flavor in a quick and simple stovetop recipe perfect for busy weeknights.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

Protein and Vegetables

  • 2 boneless, skinless chicken breasts, about 1 lb (450 g), cut into strips
  • 1 lb (450 g) mixed mushrooms (such as oyster, shiitake, white, and cremini), coarsely chopped
  • 1 onion, thinly sliced
  • 2 garlic cloves, finely chopped

Dry and Liquid Ingredients

  • 3/4 lb (340 g) linguine
  • 4 cups (1 litre) mushroom or chicken broth
  • 3 tbsp (45 ml) white miso
  • 3 tbsp (45 ml) balsamic vinegar
  • 3/4 cup (180 ml) 15% cooking cream or 35% cream

Fats and Oils

  • 1 tbsp (15 ml) olive oil
  • 2 tbsp butter

Instructions

  1. Prepare the chicken: Heat the olive oil in a large skillet or deep pan over medium-high heat. Add the chicken strips and cook until they are browned on all sides but not fully cooked through. Remove the chicken from the pan and set aside.
  2. Sauté the vegetables: In the same pan, add the butter, then add the sliced onions and finely chopped garlic cloves. Cook until the onions are translucent and fragrant. Add the chopped mixed mushrooms and sauté until they start to release their moisture and soften, about 5-7 minutes.
  3. Add broth and seasonings: Stir in the white miso and balsamic vinegar to the mushroom mixture, mixing well to combine. Pour in the mushroom or chicken broth, stirring everything together to deglaze the pan and incorporate the flavors.
  4. Cook the pasta and chicken: Return the browned chicken strips to the pan. Add the linguine, making sure it is submerged in the liquid. Bring to a gentle boil and then reduce heat to simmer, covering the pan. Cook for about 15-20 minutes or until the pasta is tender and the chicken is fully cooked, stirring occasionally to prevent sticking.
  5. Add cream and finish: Once the pasta and chicken are cooked, stir in the cooking cream (either 15% or 35% cream) to create a rich, creamy sauce. Allow it to heat through for 2-3 minutes. Adjust seasoning with salt and pepper to taste if necessary.
  6. Serve: Remove from heat and serve the creamy chicken and mushroom pasta immediately, optionally garnished with fresh herbs like parsley or thyme if desired.

Notes

  • Using a mixture of mushrooms adds depth of flavor; feel free to swap or add your favorites.
  • Choosing 35% cream will result in a richer, creamier sauce, while 15% cooking cream offers a lighter option.
  • Make sure the linguine is fully submerged in the broth for even cooking.
  • Do not skip stirring the pasta occasionally to avoid sticking to the pan.
  • For a gluten-free version, substitute linguine with gluten-free pasta.
