Ingredients
Meat and Seasoning
- 1 rib-eye steak
- Salt and pepper, to taste
Sauté
- 1 1/2 tablespoons butter, divided
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 cup chopped green bell pepper
Dip Mixture
- 1 (8-ounce) package Challenge cream cheese, softened
- 1/3 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/4 pound provolone cheese slices, chopped
- 1 1/2 cups shredded mozzarella cheese, divided
- 2 green onions, sliced
Instructions
- Season and Cook Steak: Season the rib-eye steak with salt and pepper. Heat a pan, preferably cast iron, over medium-high heat. Add 1/2 tablespoon butter and olive oil. Sear the steak for about 4-6 minutes on each side depending on the thickness. Keep in mind the steak will cook further in the oven.
- Rest and Slice Steak: Remove the steak from the pan and let it rest for a few minutes. Then cut it into bite-sized pieces and set aside.
- Sauté Vegetables: Add the remaining butter to the pan and sauté the chopped onion and green bell pepper until soft and translucent, about 5-7 minutes.
- Prepare Cheese Mixture: In a large bowl, stir together the softened cream cheese and mayonnaise until smooth. Add the garlic powder, chopped provolone, and 1 cup of shredded mozzarella cheese, mixing until well combined.
- Combine All Ingredients: Fold the chopped steak, sautéed onions, and peppers into the cheese mixture until evenly distributed.
- Transfer to Baking Dish: Place the mixture in a greased baking dish. You can use the cast iron pan used for cooking if it is appropriately sized.
- Bake First Round: Bake in a preheated oven at 350°F (175°C) for 20 minutes until the dip is hot and bubbly.
- Add Toppings and Finish Baking: Sprinkle the remaining 1/2 cup of shredded mozzarella cheese and sliced green onions on top. Bake for an additional 5 minutes until the cheese is melted and slightly golden.
- Serve: Serve warm with baguette slices or tortilla chips for dipping.
