Ingredients
Gelatin Mixture
- 2 1⁄3 teaspoons (7 grams) powdered gelatin (1 packet Knox)
- 3 tablespoons cold water
Raspberry Syrup
- 10 oz (2 1/2 cups) fresh or frozen raspberries, thawed
- 1⁄2 cup granulated sugar
- 2 tablespoons fresh lemon juice
Mousse
- 2 cups heavy whipping cream
- 1⁄4 cup powdered sugar
Garnish (Optional)
- 8-12 fresh raspberries
- Extra whipped cream
Instructions
- Bloom the Gelatin: Pour the cold water into a small bowl and sprinkle the gelatin evenly over the top. Let it sit for 5-10 minutes to soften and bloom.
- Prepare Raspberry Syrup: In a medium saucepan over low heat, combine the raspberries, granulated sugar, and fresh lemon juice. Stir frequently until the sugar dissolves completely. Then strain the mixture through a fine mesh sieve into a heat-proof bowl to remove the seeds, resulting in a smooth syrup.
- Dissolve the Gelatin: Return the strained raspberry syrup to the saucepan. Add the bloomed gelatin and warm over low heat, stirring gently until the gelatin fully dissolves. Remove from the heat and transfer the mixture to a clean large bowl to cool.
- Whip the Cream: When the raspberry syrup has cooled but is not cold, beat the heavy whipping cream with the powdered sugar on low speed until soft peaks start to form. Increase to medium speed and whip until stiff peaks form.
- Combine Mousse: Stir 1/4 of the whipped cream into the cooled raspberry syrup until blended. Then gently fold in the remaining whipped cream carefully until no white streaks remain, maintaining the mousse’s airy texture.
- Chill and Set: Spoon the mousse equally into 4-6 serving dishes. Cover and refrigerate for at least 2 hours, allowing it to set fully and develop its texture.
- Garnish and Serve: Before serving, garnish each mousse dish with extra whipped cream and fresh raspberries for a visually appealing and delicious finish. Enjoy your raspberry mousse!
Notes
- For best flavor, use fresh raspberries when in season or high-quality frozen raspberries that are fully thawed.
- Ensure the gelatin is fully dissolved to avoid lumps in the mousse.
- Do not overwhip the cream or the mousse texture will be compromised.
- This mousse can be prepared a day ahead and refrigerated for convenience.
- For a slightly tangier flavor, increase the lemon juice by 1 teaspoon.
