Ingredients
Main Ingredients
- 1 cooked rotisserie chicken, shredded
- 1 red bell pepper, deseeded and chopped into small chunks (about 1cm/½in)
- 2 tablespoons pickled jalapeños, drained, plus extra to serve
- 1 small onion, peeled and thinly sliced
- 1 tablespoon oil
- 1 tablespoon tomato purée paste
- 2 tablespoons fajita seasoning (store-bought or homemade)
- 300 g (10 1/2 oz) jar of chunky salsa (mild or hot, based on preference)
- 100 g (1 packed cup) grated mixed cheese (mixture of Cheddar, firm mozzarella, and red Leicester)
To Serve
- ½ red onion, peeled and finely diced
- Fresh coriander (cilantro), roughly chopped
- Tortilla crisps
Instructions
- Preheat the oven: Set your oven to 200°C fan (425°F / gas mark 7) to get it ready for baking the dish.
- Prepare chicken mixture: Remove all the meat from the rotisserie chicken and shred it into bite-sized pieces. Transfer the shredded chicken to a shallow roasting tray.
- Add vegetables and seasoning: Add the chopped red bell pepper, drained pickled jalapeños, thinly sliced onion, oil, tomato purée paste, and fajita seasoning to the tray with the chicken. Toss everything together well to evenly coat with the spices and tomato paste.
- Add salsa and cheese: Pour the chunky salsa over the chicken and vegetable mixture, spreading it out evenly. Then sprinkle the grated mixed cheese on top of the salsa layer.
- Bake the dish: Place the roasting tray in the preheated oven and bake for 15 minutes, until the cheese has melted completely, is bubbling, and has turned lightly golden.
- Garnish and serve: Remove from the oven and immediately sprinkle the finely diced red onion, chopped fresh coriander, and extra pickled jalapeños on top. Serve hot with a side of crunchy tortilla crisps for dipping and extra texture.
Notes
- You can adjust the heat level by choosing mild or hot salsa and the amount of pickled jalapeños added.
- Use any combination of shredded cheese that melts well; a mix of cheddar, mozzarella, and red Leicester provides good flavor and texture.
- If you prefer, substitute cooked chicken breast or thighs for the rotisserie chicken, but be sure it is fully cooked and shredded before use.
- This dish can be prepared ahead of time and baked just before serving for convenience.
- Serve with extra lime wedges or sour cream for added freshness and creaminess if desired.
