A quick and delicious one-dish dinner featuring shredded rotisserie chicken baked with salsa, cheese, and flavorful spices until golden and gooey. This Mexican fusion salsa chicken bake is perfect for an easy weeknight meal and ready in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Chicken and Vegetables

  • 1 cooked rotisserie chicken
  • 1 red bell pepper, deseeded and chopped into small chunks (about 1cm/1/2 inch)
  • 2 tablespoons pickled jalapeños, drained, plus extra to serve
  • 1 small onion, peeled and thinly sliced
  • 1 tablespoon oil
  • 1 tablespoon tomato purée paste
  • 2 tablespoons fajita seasoning (store-bought)

Sauce and Cheese

  • 300 g (10 1/2 oz) jar chunky salsa (mild or hot, depending on preference)
  • 100 g (1 packed cup) grated mixed cheese (a mix of Cheddar, firm mozzarella, and red Leicester)

To Serve

  • ½ red onion, peeled and finely diced
  • Fresh coriander (cilantro), roughly chopped
  • Tortilla crisps

Instructions

  1. Preheat the Oven: Preheat your oven to 200°C fan (425°F/gas mark 7) to prepare for baking the dish.
  2. Prepare the Chicken and Vegetables: Remove all meat from the rotisserie chicken and shred it into bite-sized pieces. Place the shredded chicken into a shallow roasting tray. Add the chopped red bell pepper, drained pickled jalapeños, thinly sliced onion, oil, tomato purée, and fajita seasoning. Toss everything well to evenly coat the ingredients with the fajita seasoning.
  3. Add Salsa and Cheese: Pour the chunky salsa evenly over the chicken and vegetables in the roasting tray. Then sprinkle the grated mixed cheese on top, covering the dish uniformly.
  4. Bake: Place the roasting tray in the preheated oven and bake for 15 minutes, or until the cheese is thoroughly melted, golden, and bubbling.
  5. Garnish and Serve: Remove the dish from the oven and immediately sprinkle the finely diced red onion, freshly chopped coriander, and additional pickled jalapeños on top. Serve hot accompanied by crunchy tortilla crisps for scooping.

Notes

  • You can adjust the heat level by using mild or hot salsa and adding more or fewer jalapeños as preferred.
  • Using a rotisserie chicken significantly reduces preparation time and adds great flavor.
  • Feel free to swap the mixed cheese blend with your preferred cheese varieties for different flavor profiles.
  • For a more intense flavor, allow the dish to rest 5 minutes after baking before serving.
  • Serve with tortilla crisps to add a crunchy, fun texture to this comforting bake.
