Soft and chewy salted honey pistachio cookies made with rich browned butter, sweet honey, roasted pistachios, and a hint of sea salt for a perfect balance of sweet and salty flavors. These cookies offer a delightful texture with optional white chocolate chips and a sprinkle of flaky sea salt on top.

  • Total Time: 30 minutes
  • Yield: 24 cookies

Ingredients

Wet Ingredients

  • 1 cup salted butter (browned and cooled)
  • ½ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ cup honey
  • 1 large egg
  • 1 tbsp vanilla extract

Dry Ingredients

  • 1 tsp coarse sea salt
  • 1 tsp baking soda
  • 2½ cups all-purpose flour

Add-ins

  • 1 cup chopped roasted pistachios
  • 1 cup white chocolate chips (optional)
  • Flaked sea salt for garnish (optional)

Instructions

  1. Brown the Butter: In a skillet, melt the salted butter over medium heat until it turns a golden brown color and emits a nutty aroma. Remove from heat and let it cool for 20–30 minutes to avoid cooking the eggs later.
  2. Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  3. Mix Wet Ingredients: In a large mixing bowl, combine the cooled browned butter, light brown sugar, granulated sugar, and honey. Stir until the mixture is creamy and well combined. Then add the egg and vanilla extract, mixing thoroughly.
  4. Add Dry Ingredients: Stir in the coarse sea salt and baking soda into the wet mixture. Gradually fold in the all-purpose flour until there are no dry spots and the dough comes together.
  5. Incorporate Pistachios and Chocolate Chips: Gently fold in the chopped roasted pistachios and, if using, white chocolate chips to evenly distribute them throughout the dough.
  6. Portion and Bake the Cookies: Scoop dough balls onto the prepared baking sheet, spacing them apart. Bake the cookies in the preheated oven for 8–10 minutes, removing them slightly underbaked for a chewier texture.
  7. Cool and Garnish: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Sprinkle with flaked sea salt if desired for an extra layer of flavor.

Notes

  • Browned butter adds a rich, nutty flavor—don’t skip this step!
  • Slightly underbake the cookies for a softer, chewier bite.
  • Dough can be chilled or frozen for later baking.
  • Customize by adding lemon zest, spices, or substituting different nuts.
